If you think you’re sick of cauliflower, think again. Cheesy, crispy, and sprinkled with rosemary, our cauliflower popcorn is way better (and healthier!) than regular popcorn for movie night. We’re also pretty sure that if you introduce this to your cauli-resistant friends, you’ll turn ‘em with this cauliflower antidote. Then, the only problem you’ll have left is how you’re going to be able to make enough to please everyone!
- 1 medium sized cauliflower
- 1/2 cup grated parmesan plus a little more for garnishing
- 2 tsp rosemary
- 2 tb olive oil
- salt to taste
Get that oven ready by preheating to 425 degrees.
Then, using a knife or your hands, break apart the cauliflower into small florets. Give it a little rinse to make sure it’s clean. If you bought a block of parmesan like us, grate it up. Then, dice the rosemary into small pieces.
In a large bowl, combine the cauliflower, cheese, and rosemary. Drizzle the olive oil over the cauliflower and mix thoroughly. When all the cauliflower is coated, it’s ready for the oven.
Spread out all the cauliflower onto a baking sheet, and then top with a little more cheese. Bake for about 30 minutes, or until it’s browned the way you like. Mmmmm!
