How to Make Gourmet Lollipops Without the Expensive Molds

Impress your friends and colleagues on National Lollipop day (July 20th) with these stylish lollipops. They may look gourmet, but they’re actually extremely simple — you only need five ingredients for both! Orange, Caramel & Black Pepper Lollipops

Ingredients:

Makes 5

– 5 orange-flavored Jolly Ranchers or Foxes Glacier Fruits

– 5 Werther’s Original candies

– ½ tsp freshly ground black pepper

Tools:

– 5 tea light cases, thoroughly washed and dried

– 5 lollipop sticks

– parchment paper

Directions:

1. Preheat oven to 275 degrees Fahrenheit, and line a baking sheet with parchment paper.

2. Take one of the tea light cases, and cut a small sliver (the width of your lollipop stick) out of the side using a pair of sharp scissors. Don’t go all the way to the bottom or your candy will ooze out. Flatten out the base of the tea light case using the end of a wooden spoon.

3. Sprinkle a pinch of ground black pepper into the case, then place 1 orange candy and 1 Werther’s candy in the case. Sprinkle a pinch of black pepper on top, and repeat for the remaining lollipops.

4. Place in the oven for 7-8 minutes, until the candies have completely melted. Pro Tip: You may find it easier to place each candy case in the oven at 1-minute intervals. This means you can take them out of the oven at 1-minute intervals, giving you plenty of time to insert the lollipop stick before the candy starts to set.

5. Carefully remove from the oven, and insert a lollipop stick into each candy case. Twist the stick around to ensure each one is fully covered in candy.

6. Leave them to set for 10 minutes. Then carefully stretch out the sides of each case until the lollipops release.

7. Place on parchment paper to cool completely.

Mint Lollipops

Ingredients:

Makes 5

– 10 Foxes Glacier Mints or other clear mint candy (such as Arcor Crystal Mints or Matlow Cry Mints)

– a selection of small mint leaves

Tools:

– 5 lollipop sticks

– 5 tea light cases, thoroughly washed and dried, and prepared as above

Directions:

1. Preheat oven to 275 degrees Fahrenheit, and line a baking sheet with parchment paper.

2. Place 1 mint candy in each case and bake in the oven for 4-5 minutes, until completely melted.

3. Take your lollipops out of the oven, and very carefully but quickly place 1 small or 3-4 tiny mint leaves on the melted candy. Push the mint leaves in slightly so they stick. Place 1 more mint candy in each case, and put back in the oven for 4-5 minutes until melted completely.

4. Carefully remove from the oven. Check if any of the mint leaves are sticking out, and if they are, carefully and quickly push them inside the melted candy using a cocktail stick (any leaf left sticking out will turn brown). Insert a lollipop stick into each candy case. Twist the stick around to ensure each one is fully covered in candy.

5. Set for 10 minutes before carefully stretching out the sides of each case until the lollipops release. Then place on parchment paper to cool completely.

Place 1 mint candy in each case and bake in the oven for 4-5 minutes, until completely melted.

Take them out of the oven, and very carefully but quickly place one small or 3-4 tiny mint leaves on the melted candy. Push the mint leaves in slightly so they stick. Place one more mint candy into each case and put back in the oven for 4-5 minutes until melted completely.

Carefully remove from the oven. Check if any of the mint leaves are sticking out, and if they are, carefully and quickly push them inside the melted candy using a cocktail stick (any leaf left sticking out will turn brown). Insert a lollipop stick into each candy case. Twist the stick around to ensure each one is fully covered in candy. Set for 10 minutes before carefully stretching out the sides of each case to release the lollipops. Then place them on parchment paper to cool completely.
