Grab Your Chopsticks: It’s Sushi Cupcake Time!

Remember how we started this week out rounding up all sorts of rolls? Spring rolls, rollups, and cucumber rolls, oh my! What better way to finish off the week with a sweet take on a classic roll? That’s right. Those adorable little sushi-looking things you see in the photo above are actually mini cupcakes! Topped with frosting, shredded coconut, and cleverly selected and sliced gummy candies.

Ingredients:
– fluffy white cake mix

– 1 cup water

– 1 cup greek yogurt

– black fondant (available on Amazon)

– 1 tube or can white frosting

– shredded coconut

– assorted gummy candies (sour straws, fruit wedges, Swedis Fish, Haribo Fruity Frutti)

– tools: piping tip (optional)

When we initially set out to tackle this bit of sweetness, we had big ideas about sprinkles, hand-rolled fondant fish, and nonpareils. Then we realized gummy candies are where it’s at! Yes we used fondant in place of seaweed, but everything else is super easy to find and takes just about 40 minutes to complete, including baking time.

Preheat the oven to 350 degrees F. For the cake part of the deal, we used Duncan Hines Fluffy White Cake Mix, a cup of water, and a cup of nonfat Greek yogurt in place of oil and eggs. Not only is this a “skinny” take on cupcakes, but it gives your cake a spongey, Angel food-like texture that is super tasty.

Mix it up.

Pour it into muffin pans with cupcake liners.

Bake for 20 minutes. Use a toothpick to test whether or not cupcakes are cooked all the way through.

Now it’s time to get transform these cupcakes into little pieces of sushi and sashimi!

Roll out your fondant and cut it into a strips that fit around your cupcakes. You’ll probably need about 2 inches off of your fondant block.

Unwrap your cupcake. Wrap with a strip of fondant. Pipe a bit of frosting onto the top – this doesn’t need to be perfect. Top with coconut to give a rice-like effect to the frosting. Time to top with a gummy candy. To make a cupcake that looks like tobiko (fish roe), we used Haribo Fruity Fruitt. So fun!

For a sashimi look, simply unwrap your cupcake, top with frosting and coconut, add a Swedish Fish and wrap with a small strip of fondant.

Lay everything out on a sushi tray, grab some chopsticks, and serve! Yum!

I know you've just started thawing off after a very long and very gloomy winter, but it's never too early to think about the holidays IMO. The whole season emphasizes goodness, hope, and love which is way more than a one-month trend. And apparently, Reese Witherspoon and Jennifer Garner agree because they're bringing us a new Christmas movie! This duo are best friends IRL, and they've teamed up on projects like The Last Thing He Told Me and last year's Hello Sunshine event. Now, they're working on a brand new project that revolves around our favorite holly jolly lady: Mrs. Claus.

What is Reese Witherspoon and Jennifer Garner's new movie?

Mrs. Claus is a new movie coming from Reese Witherspoon's Hello Sunshine production company. Jennifer Garner is also serving as a producer, as well as the movie's star! According to Deadline sources, the movie is being written by Scrambled's Leah McKendrick.

We don't have official plot details yet, but considering the movie called Mrs. Claus, I'd love to see a film about our leading lady taking over for Santa on Christmas Eve. (TBH, it would probably be a little more organized). After hundreds of years with Santa getting all the credit, I think it's more than fair for Mrs. Claus to get her share in the action — and I know if Reese Witherspoon is involved, it's going to be a story full of heart, confidence, and light.

When is Mrs. Claus coming out?

We don't have an official release date for the new movie yet. I'm guessing we'll see it next holiday season! Anywhere after September 1 is a great holiday movie release window because as soon as it starts getting chilly, I am ready for hot cocoa, cozy sweaters, and all the Christmas cookies I can eat ;).

Who else is in the Mrs. Claus cast?

There isn't an official cast list yet, which means the studio is probably still holding auditions. I'd love to see anyone from Millie Bobby Brown to Madelyn Cline to Lily Collins and Ashley Park.
