Zucchini Rice Gratin

Sliced zucchini and tomatoes are a great alternative to heavy potato gratin. Thanks to the addition of rice, you’ll still leave the dinner table totally satisfied.

  • medium onion, halved lengthwise and thinly sliced  ( 1 )
  • garlic cloves, minced  ( 3 )
  • large eggs, lightly beaten  ( 2 )
  • chopped fresh thyme leaves  ( 1 teaspoon )
  • grated Parmesan, divided  ( 1/2 cup )
