Turkey Pho

This is a genius way to use up your turkey leftovers from Thanksgiving! Pro tip: If you don’t feel like making the broth, hit up your local Pho shop for it! Semi-homemade is a-okay with us!

  • coriander seeds  ( 2 tablespoons )
  • cloves  ( 4 whole )
  • star anise  ( 4 whole )
  • cinnamon stick  ( 1 )
  • homemade turkey stock (or homemade or store-bought chicken stock)  ( 1 quart )
  • green onions (green top parts only) chopped  ( 1 bunch )
  • ginger, sliced and smashed with side of knife  ( 1 3-inch chunk )
  • brown sugar, or more to taste  ( 1 teaspoon )
  • fish sauce, or more to taste  ( 1 tablespoon )
  • kale, chopped into bite-sized pieces  ( 1-2 cup )
  • leftover turkey breast, shredded  ( 1/2 pound )
  • cellophane/bean thread noodles  ( 1 bunch (approx. 2 oz.) )
  • chopped green onions  ( 1-2 tablespoon )
  • lime, cut into wedges  ( 1/2 )
  • Sriracha chili sauce to taste
