  • fine grain bulgar ( 1-1/2 cups )
  • boiling water ( 3 cups )
  • fresh lemon juice ( 3 tbs )
  • honey ( 1 tsp )
  • ground cumin ( 1 tsp )
  • cayenne pepper ( 1/4-1/2 tsp )
  • salt
  • extra-virgin olive oil ( 1/4 cup )
  • chickpeas, rinsed and drained ( 1 can )
  • drained jarred roasted red peppers, diced (about 1 cup) ( 6 oz )
  • quartered yellow cherry tomatoes ( 1/2 cup )
  • small red onion, finely chopped (to reduce its bite, you can soak it and then squeeze it out with the bulgur for some or all of the absorption time) ( 1 )
