Chicken and Lamb Sausage Paella

Moorish Paella

We’re digging this twist on classic paella that calls for chicken, lamb sausage, and spicy harissa. It would make a perfect potluck dish.

  • small links of Merguez sausage  ( 4 )
  • cauliflower cut into pieces  ( 1/2 head )
  • caraway, ground  ( 1 teaspoon )
  • smoked paprika  ( 1 teaspoon )
  • paprika  ( 1 teaspoon )
  • cumin  ( 1/2 teaspoon )
  • harissa  ( 1 tablespoon )
  • Arborio (or other short grain) rice  ( 2 cups )
  • tomato sauce  ( 8 ounces )
  • chicken stock  ( 3 cups )
  • Salt to taste 
  • small onion, diced  ( 1 )
  • garlic, diced  ( 1 clove )
  • extra virgin olive oil  ( 2 tablespoons )
  • dry wine   ( 1/2 cup )
