Creamy eggplant, nutty tahini, a fresh squirt of lemon…what more could you ask for in a dip? Oh yes, some toasted pine nuts on top, please :)

  • medium sized eggplants (I used graffiti eggplant)  ( 5 )
  • lemon juice + the zest of 1/2 of a lemon  ( 2 tablespoons )
  • extra virgin olive oil  ( 2 tablespoons )
  • tahini  ( 1 tablespoon )
  • garlic, minced  ( 1 clove )
  • flat leaf parsley, chopped  ( 1 tablespoon )
  • leaves of basil, chopped  ( 5 )
  • salt + pepper (to taste) 
  • pine nuts, toasted (optional)  ( 1 tablespoon )
  • a pinch of toasted sesame seeds (optional)
