French Onion Tart

What makes this onion tart so delicious? The addition of cognac to the caramelized onions sure doesn’t hurt! It might be a bit labor intensive, but the results are worth it!

  • cognac, brandy or vermouth (optional) ( 2 teaspoons )
  • grated Gruyere, Comte or Swiss cheese ( 1/2 cup )
  • freshly ground black pepper
  • sugar ( Pinch )
  • low-sodium beef, veal or mushroom stock/broth ( 1 cup )
  • heavy cream (half-and-half and milk work too, but cream tastes best) ( 1/2 cup )
  • all-purpose flour ( 2 cups )
  • butter ( 1 tablespoons )
  • cold water ( 3 tablespoons )
  • yellow onions (about 4 medium), halved and thinly sliced ( 1 1/2 pounds )
  • table salt ( 1/2 teaspoon )
  • large egg ( 1 )
  • chilled butter, in cubes ( 1/2 cup )
  • olive oil ( 1 tablespoon )
