Eggs for brunch only? No way! You’ll be jammin’ on breakfast for dinner all week long with this broccolini and potato frittata. Though, we wouldn’t blame you for sneaking a pre-work bite either ;)

  • small waxy potatoes (about 1 ounce each), scrubbed and quartered  ( 8 to 10 )
  • vegetable or another broth; just use salted water if you don’t have it around  ( 1 cup )
  • olive oil  ( 1/4 cup )
  • broccolini, trimmed and halved lengthwise or chopped into 1-inch pieces  ( 8 ounces (usually 1 bundle) )
  • small red or white onion, thinly sliced  ( 1 )
  • large eggs  ( 8 )
  • Parmesan cheese  ( 1 cup )
  • Salt and freshly ground black pepper, to taste
