Treat Yo’Self: Add Lobster to Your Potato Salad

Lobster And Potato Salad

Go ahead: you’ve done it to mac and cheese, might as well dump juicy lobster meat in with your dijon-dressed potato salad. Just be sure to invite us over for a bite! :)

  • unpeeled small Yukon gold (Ina’s suggestion) or fingerling (what I used) potatoes  ( 1 1/2 pounds )
  • Coarse, kosher or sea salt 
  • champagne or white wine vinegar  ( 3 tablespoons )
  • dijon mustard  ( 1/2 teaspoon )
  • minced or pressed garlic  ( 1/2 teaspoon )
  • large or extra-large egg yolk, ideally at room temperature  ( 1 )
  • freshly ground black pepper 
  • olive oil  ( 1/2 cup )
  • dry white wine (you can skip this, or use less, with little harm; I used 1 tablespoon vermouth instead)  ( 1/4 cup )
  • drained capers (I imagine minced cornichons would be a good alternative)  ( 3 tablespoons )
  • scallions, thinly sliced (yielding about 1 cup)  ( 6 )
  • medium stalks celery, diced small (about 1/4 inch) (yielding about 1/2 cup)  ( 2 )
  • finely diced red onion  ( 1/2 cup )
  • cooked lobster meat, cooked and cooled, in a 1-inch dice (from about 7 to 8 pounds fresh lobster; see post above for better budgeted suggestions)  ( 1 1/2 pounds )
  • lemon  ( 1 )
  • coarsely chopped fresh tarragon (Ina’s suggestion) or flat-leaf parsley (what we used)  ( 3 tablespoons )

  • egg yolk  ( 1 large )
