Is There Anything Zucchini Can’t Do? Meet Squachos!

Zucchini is one of the most popular veggies to use in low-carb recipes — think zoodles, zucchini pizza, etc. But have you ever used it as a replacement for a tortilla chip? Turns out, grilled zucchini slices make fantastic nachos — or squachos! Cut the slices fairly thick so you can still dig in without any cutlery, and pile them high with your favorite nacho toppings. Here I used black beans, tomatoes, avocado, and sour cream (and, of course, plenty of cheese!).

Ingredients:

  • 2 medium zucchinis
  • 1 cup grated cheese (I used cheddar and mozzarella)
  • 1/2 cup cooked black beans
  • 8 cherry tomatoes, cut into quarters
  • your choice of cold toppings, e.g. avocado, fresh cilantro, sour cream, etc.

Instructions:

1. Cut the zucchini into 1-centimeter slices. Cook on a griddle for a few minutes each side.

2. Lay the grilled zucchini slices on a baking tray, and top with grated cheese, black beans, and quartered cherry tomatoes.

3. Place the tray under a medium broiler for a few minutes, until the cheese has melted. Serve with your choice of cold toppings, e.g. avocado, cilantro, sour cream, etc.

Cut the zucchini into one-centimeter slices. Cook on a griddle for a few minutes on each side. If you don’t have a griddle pan, just use a frying pan instead.

I like to cut my zucchini slices at a slight angle, so they’re a bit larger (and can fit more toppings!).

Lay the grilled zucchini slices on a baking tray, and top with grated cheese, black beans, and quartered cherry tomatoes. If you like things spicy, you could also sprinkle over some of your favorite taco spice mixture, or use an extra hot salsa instead of the tomatoes.

Place the tray under a medium broiler for a few minutes, until the cheese has melted. Serve with your choice of cold toppings, e.g. avocado, cilantro, sour cream, etc.

The end result is everything you’d ever want your nachos to be — hot, cheesy, creamy, fresh, and everything in between!

And since these squachos are much lower in carbs and calories than the usual indulgence, you can pile your plate high (…if they even make it to a plate, that is).
