Spike Your Sweets with This No-Bake Baileys Bonbons Recipe

The time has come… to shake your bonbon. With the holidays in full gear, we’re preparing for the multiple potlucks, parties, and overall festivities by creating an easy, classy dessert that anyone can easily whip up. And of course, no holiday Brit.co dessert  is complete without holiday spirit(s). We’ve made spiked eggnog and strawberry Santas, and then we realized, we’re missing chocolate! And we’re serious about our chocolate. Presenting No-Bake Baileys Bonbons!

Not only are these morsels delicious, but they only require 4 ingredients (plus sprinkles)!


– 3 tb Baileys

– 10 oz bag of dark chocolate chips

– 2 tb butter

– 0.5 cup + 1 tb heavy cream

– optional toppings and decorations of your choosing (we used Christmas sprinkles)

First, put your chocolate chips in a separate container and set aside. This will be the container that holds the chocolate while it solidifies in the fridge.

Chop up your 2 tb of butter to little pieces so it melts easier. In a small saucepan, bring the cream and butter to a gentle boil over medium heat. Once it begins to boil, pour it over the chocolate. Let it stand for about 2 minutes.

After letting it stand, begin to mix the chocolate and the cream. The heat of the cream should be hot enough to melt the chocolate. Stir thoroughly. If you keep stirring and it still doesn’t melt, pop it in the microwave and heat at 20 second intervals until it melts. When it’s all melted, stir in the Baileys! Then, pop it in the fridge for about 3 hours until it hardens. At this point, it should be firm, but not so hard that you can’t scoop it out.

Remove the chocolate from the fridge. Now, it’s time to shape them. You can use an ice cream scoop or melon baller to scoop it out.

Roll it between your hands to create a ball. If it seems too hard, don’t worry. The heat from your hands will melt the chocolate slightly to make it easier to shape.

Ready to decorate? We used these delightful mistletoe and Christmas themed sprinkles. They remind us a lot of our favorite old school dessert, Dippin’ Dots. Simply dip, roll, and you’re done! Is it just us or does that also sound like the next hot dance move to sweep the nation?

These adorable bonbons have gotten us even more excited for Christmas… if that’s even possible.
