Tomato purists rejoice! This no-frills stuffed tomato recipe is beyond satisfying. But you could always amp up the creamy rice stuffing with pancetta, artichokes, or even chopped kale, too!

  • olive oil  ( 2 to 3 tablespoons )
  • Coarse or kosher salt 
  • medium-to-large (mine were 3 inches across, averaged 8 1/4 ounces in weight) tomatoes  ( 6 )
  • Red pepper flakes, to taste 
  • onion, finely chopped  ( 1/4 medium or 1/2 small )
  • garlic clove, minced  ( 1 )
  • arborio or another short-grained starchy rice  ( 9 tablespoons )
  • chopped parsley, oregano or slivered basil (or mix thereof)  ( Few tablespoons )
  • breadcrumbs  ( Handful )
