Cowgirl Caviar

Channel your inner cowgirl with this black-eyed pea chip dip. The chunky Southwestern snack has a nice kick to it thanks to garlic, cayenne, and cilantro.

  • red onion, minced  ( 2 tablespoons )
  • celery, minced  ( 2 tablespoons )
  • cilantro, minced  ( 1/3 cup )
  • green onions, minced  ( 1 tablespoon )
  • garlic, minced finely  ( 1 clove )
  • red wine vinegar  ( 1/3 cup )
  • extra virgin olive oil  ( 1/8 cup )
  • neutral flavored oil, i.e., canola, grape seed  ( 1/8 cup )
  • dried cayennes or chile tepins cut into thin strips with scissors  ( 1 to 2 )
  • kosher salt and fresh ground black pepper 
  • corn chips  ( 1 package )
