Crispy Kale Salad
This salad is made even better by the fact that the kale is roasted (not quite to kale chip crispiness, but almost). You can add in what ever other veggies you like, but we’re excited about the pomegranate arils.

  • honeycrisp apple, diced ( 1 )
  • goat cheese, crumbled ( 2 ounces )
  • cinnamon ( 1/4 teaspoon )
  • garlic, minced ( 1 clove )
  • small sweet potato, diced ( 1 )
  • pomegranate arils ( 1/4 cup )
  • kale, torn from stems and torn into pieces ( 1 large bunch )
  • nutmeg ( 1/4 teaspoon )
  • salt ( 1/4 teaspoon )
  • pepper ( 1/4 teaspoon )
  • shallot, diced ( 1 )
  • pine nuts ( 1/4 cup )
  • fresh apple cider ( 2 teaspoons )
  • thick-cut bacon, chopped ( 2 slices )
