  • leeks, white and light green part only, cleaned, cut lenghtwise and then crosswise in 1/4 inch half moons. (you should have about 4 cups)  ( 3 medium )
  • butter, divided (3/5)  ( 8 tablespoons )
  • coarse black pepper  ( 1 tablespoon )
  • salt  ( 2 teaspoons )
  • phyllo dough (thawed overnight in the fridge if purchased frozen)  ( 1/2 package )
