If rice seems to be creepin’ up in every dish you’ve eaten lately, mix things up with farro. The ancient grain has a satisfying meaty chew and pairs perfectly with a fresh tomato sauce.

  • semi-pearled farro ( 1 cup )
  • onion ( 1/2 large )
  • cloves garlic ( 2 )
  • grape or cherry tomatoes ( 9 oz )
  • kosher or coarse sea salt ( 1 1/4 tsp )
  • red pepper flakes ( Up to 1/4 tsp )
  • olive oil ( 1 T )
  • Basil leaves ( a few )
  • Grated parmesan cheese, for serving
  • large onion (I usually use a white one, for mildness) ( 1/2 )
  • grape or cherry tomatoes ( 9 ounces )
  • kosher or coarse sea salt ( 1 1/4 teaspoons )
  • red pepper flakes (to taste) ( Up to 1/4 teaspoon )
  • olive oil, plus extra for drizzling ( 1 tablespoon )
  • Few basil leaves, cut into thin ribbons
