Hop to It and Make These Ghirardelli Dipped Peanut Butter Easter Eggs

It’s beginning to look a lot like Easter at Brit HQ. We’ve been churning out Easter egg ideas like candy-filled place cards, DIY Easter baskets and decorations galore. Now, we’re turning our attention to the sweet stuff — candy! Peanut Butter Eggs, to be exact. We’ve teamed up with Ghirardelli to show you how to whip up colorful peanut butter eggs for your Easter celebrations using their White and Dark Candy Making products. Warning: These babies will go FAST, so be sure to make a few extra for yourself :)

Ingredients:

  • 1 cup creamy peanut butter
  • 4 ounces cream cheese
  • 1 cup powdered sugar
  • 1 tsp vanilla
  • 1 (12 ounce) package Ghirardelli® Dark Melting Wafers
  • 1 (12 ounce) package Ghirardelli® White Melting Wafers
  • Food coloring (optional, for decoration)

Directions:

  1. Line a baking sheet or tray with waxed paper. In a large microwave-safe bowl, combine peanut butter and cream cheese. Microwave, uncovered, on high for 30 seconds or until mixture is slightly softened. Stir in powdered sugar and vanilla.
  2. Put peanut butter mixture in the freezer for 10 minutes. Remove from the freezer and shape into eggs using two spoons. Place eggs on the prepared baking sheet. Cover and freeze for 15 minutes or until firm.
  3. Place Ghirardelli® Dark Melting Wafers in a microwave-safe bowl. Microwave for 60-90 seconds, until melted. Using a fork, dip eggs into melted mixture, allowing excess to drip back into bowl. Place dipped eggs back on a cooling rack.
  4. Place Ghirardelli® White Melting Wafers in a microwave-safe bowl. Microwave for 60-90 seconds, until melted. Add food coloring of choice. Stir to combine. Using a fork, dip eggs into melted mixture and place on a cooling rack.
  5. Let cool. Enjoy!
