We all know that a hot day calls for a seriously fruity summer聽cocktail. So next time the sun shines, why not make the most of聽it by blending up a batch of聽these homemade lime and pineapple slushies? They鈥檙e really easy to make (we鈥檙e talking two minutes kind of easy), and they鈥檙e the perfect refreshment for a hot聽day. If you鈥檝e got an excuse (Cinco de Mayo, anyone?), they鈥檙e even better with a shot of your favorite spirit. I used gin, but vodka, rum or tequila would all聽work really well, too.

Ingredients:

Makes three
鈥 approximately 40 ice cubes

鈥 approximately 40 cubes frozen pineapple juice

鈥 3 shots gin, vodka, rum or tequila

鈥 juice of one lime

鈥 6 Tablespoons cold pineapple juice

Instructions:

1.聽Add the ice cubes, frozen pineapple juice, lime juice and your spirit of choice to a high-powered blender.聽Blend at a fairly high speed until the mixture is fluffy and no large chunks of ice remain.

2. Divide the mixture into three cups or glasses, and pour a little more cold pineapple juice over the top. Serve immediately.

Add the ice cubes, frozen pineapple juice, lime juice and your spirit of choice to a high-powered blender.聽Blend at a fairly high speed until the mixture is fluffy and no large chunks of ice remain.

The exact time this takes will depend on your blender, but mine took around 30 seconds. If your blender came with a tamper, you鈥檒l probably need to use it to push the ice cubes into the blades.

Divide the mixture into three cups or glasses, and pour a little more cold pineapple juice over the top. This helps to make your slushies nice and juicy.

And there you have it! I told you it was easy. Just make sure your freezer is stocked up with ice cubes, and you鈥檒l be ready to make聽boozy slushies whenever the sun shines.
