This Witches Brew Halloween Smoothie Bowl Is Hideously Healthy
There’s a fine line between cutesy Halloween food — like these spooky cookies — and downright gross. (Have you seen those kitty litter cakes?) Pinterest is both a blessing (we’re still laughing at these Pinterest fails) and a curse sometimes. This eyeball smoothie bowl is perhaps a little close to that line, but not too close! A super nutritious green smoothie bowl, filled with juicy eyeballs (aka stuffed lychees) is probably the only Halloween recipe that your gym coach would actually recommend. Make the smoothie at home before you head out in the morning (check out these stylish bottles to take yours on the go), then put it together with the eyeballs in your office kitchen. Ingredients:
Makes 2 smoothie bowls
- (1) 15 ounce can lychees in light syrup, drained
- 12-14 blueberries
- red food coloring (we use Wilton gel color)
- 4 packed cups fresh kale
- 2 ripe bananas
- 1 green apple
- 8 Sayer dates or 4 Medjool dates, pitted
- 2 teaspoons chia seeds
- 1/4 cup mixed nuts
- 1 1/2 cups almond milk or regular milk
Instructions:
- Take the drained lychees and stuff each one with a blueberry to form an eyeball. Dip a toothpick in red food coloring and dot the coloring into the cracks in the lychees to get the look of bloodshot eyes. Put to one side.
- Place the remaining ingredients into a blender and blend until smooth. The smoothie will be quite thick to ensure the eyeballs don’t sink.
- Divide the smoothie between two bowls and top each with five or six eyeballs. Serve immediately.
