Crushed Candy Cane Chocolate Cakes!

Chocolate and candy. What more could one ask for this Christmas? Okay, maybe a lot ;) But everyone should indulge a little bit and these two-bite mini cakes are the perfect treat for your holiday soiree this year. Everything mini is just cuter, right? And I love it because I satisfy my sweet tooth without walking around with a plate during all the festivities.

Ingredients:

– chocolate cake mix + any ingredients it calls for

– 1 cup crushed candy canes

– 1 cup white chocolate chips

– 1/4 cup heavy cream

Tools:

– a mini square baking pan (like this one)

Instructions:

1. Make the cake batter according to the packaging.

2. Spray pan with non-stick spray then bake for about 12 minutes or until it passes the toothpick test.

3. Let mini cakes cool completely.

4. While cakes are cooling, crush the candy canes with a rolling pen. Set aside.

5. Slice the tops of of the cakes so that they flat and easy to eat.

6. Place one cup white chocolate chips into a bowl. In a separate bowl, heat the cream until almost boiling, about 25 seconds.

7. Pour cream over white chocolate chips and cover for five minutes.

8. Stir together until completely melted. Microwave for additional 5 seconds at a time if needed to melt completely.

9. If frosting is too thick, add additional cream one teaspoon at a time until the frosting is thick but can still be poured.

10. Smooth frosting over mini cakes with a knife.

11. Add crushed candy canes on top immediately so that the frosting will harden around the candy.

Make cake batter according to the box’s instructions. Spray pan with non-stick spray then bake for about 12 minutes or until it passes the toothpick test.

Let mini cakes cool completely.

Pour cream over white chocolate chips and cover for five minutes. Stir together until completely melted. Microwave for additional 5 seconds at a time if needed to melt completely.

If frosting is too thick, add additional cream one teaspoon at a time until the frosting is thick but can still be poured. Be sure to get out all the little lumps!

Smooth frosting over mini cakes with a knife. Add crushed candy canes on top immediately so that the frosting will harden around the candy.

Now its time to eat! These will keep for a few days covered at room temperature. Easy to make ahead of time, so you’re not running around before the big holiday party.
