It’s Memorial Day weekend! Aka the start of summer and BBQ season. To celebrate we’ve been breaking out the dips this week on Brit + Co. This creamy BBQ dip is a perfect addition to your parties this weekend and all summer long! Best of all you can make this with all the ingredients you’ll have around for your BBQ.
– 1 cup plain Greek yogurt
– 1 cup of your favorite BBQ sauce
– 1 lb chicken breast or tenderloin
– 1/4 cup chives
– 1 tablespoon olive oil
– 2 teaspoons kosher salt
– for dipping: 1 bag of potato chips
The barbecue sauce you choose will play a huge role in the flavor of this dish – we went with Stubb’s Sweet Heat Bar-B-Q Sauce.
Start by cooking the chicken in a pan with olive oil and 1 teaspoon salt over medium heat. Cook for 3-4 minutes in each side until cooked through. BBQ pro tip: you can grill the chicken too!
Dice up the chicken into small bite-size cubes.
Mix the Greek yogurt, 1 teaspoon salt and BBQ sauce together until well combined. Stir in the diced chicken.
Put the BBQ chicken dip in a bowl and top with chives. Serve with potato chips. We love these sea salt waffle chips for dipping.
