Had your fill of Margarita Pie and Cinco de Mayo Jello Shots? Us too. That's why for this week's recipe roundup, we turn our attention to one of our favorite crunchy greens: Asparagus. You know the weather's taking a turn for the awesome when you see fresh asparagus showing up at the farmer's market and looking oh-so-green.

Plus, not only is May National Bike Month but it's National Asparagus Month and National Salad Month too! Asparagus, biking, Derby, Cinco de Mayo, and Mother's Day? This month pretty much rocks.

1. Escarole, Endive, Radicchio & Shaved Asparagus Salad: We'll kick this roundup off with a bit of deliciousness from Brit contributor Jaymee Sire. This gorgeous plate of greenery is roughage-rich salad, topped with shaved asparagus. (Recipe and photo: E is for Eat)

2. Asparagus with Sweet Onions, Garbanzo Beans, and Mint: This makes a perfect side for any time of year. Try mixing things up by using manchego, black beans and cilantro, parmesan, kidney beans, and basil, etc. (Recipe and photo: CHOW)

3. Shaved Asparagus Quinoa Salad: This is a great dish to make with leftover quinoa, brown rice, or any kind of nicely textured grain. (Recipe and photo: Cookie + Kate

4. Toasted Sesame & Almond Asparagus Salad: The toasted sesame seeds and almonds are what elevate this salad to a sort of smokey, hearty place. if you end up with salad to spare, throw leftovers on a piece of flatbread for a lovely lunch. (Recipe and photo: Love & Lemons

5. Raw Asparagus and Mushroom Salad with Walnuts & Miso: Earthy enough to make a whole meal, this is another one where the leftovers could easily be repurposed into a flatbread, pasta, or sandwich. (Recipe and photo: Gourmande in the Kitchen

6. Weaved Asparagus Salad: It's true. Asparagus and parmesan are basically besties. This fun preparation is a great way to serve a simple and scrumptious salad. (Recipe and photo: Food Mayhem)

7. Warm and Smokey Asparagus Bacon Salad: What goes better with asparagus than parmesan? Bacon, of course. (Recipe and photo: The Hungry Mouse

8. Spring Asparagus Salad with Creamy Raw Milk & Goat Cheese: What has us swooning over this little number is the super creamy dressing and crunchy radishes. (Recipe and photo: Local Milk

9. Shrimp, Radish and Asparagus Salad: Grassy asparagus paired with meaty sautéed shrimps take this salad to the main course level. And we love just about anything that incorporates sugar snap peas and Thai basil. (Recipe and photo: The Gouda Life

10. Aphrodisiac Greens on Toast:  Part of our Valentine's brunch, this throws a salad and an egg right on a piece of toast. We topped the toast with basil walnut pesto, avocado, and gruyere. (Recipe and photo: Brit)

11. Asparagus Caesar Salad: Nori takes the place of salty anchovies in this vegan Caesar. We love the idea of cutting the asparagus even more thinly so it turns into a cold asparagus pasta. (Recipe and photo: Edible Perspective

12. Orzo Super Salad: After seeing The Avengers this weekend, we've got super heroes on the mind. And super foods… ;) (Recipe and photo: 101 Cookbooks
