Celebrate Friendsgiving With Our Pumpkin Sage Pasta

Guess what? Friendsgiving is right around the corner! Don’t get us wrong… we LOVE Thanksgiving. But we also love having an excuse to get all of our besties together to celebrate great friendships and good food! This year, kick your holiday feast up a notch with our Pumpkin Sage Pasta.

Let’s be honest: Not all carbs are created equal. Pasta is one of our favorites (duh!) and besides being super versatile and easy to prepare, it’s a healthy, complex carb. We teamed up with our friends at Passion for Pasta to bring you this rigatoni recipe packed with all the flavors of fall. Read on for more!

Ingredients:

Instructions:
1. Bring a large pot of water to a boil. Add pasta. Cook 10-11 minutes, until al dente.

2. Chop onion and garlic. In a large saucepan, heat 2 Tablespoons of olive oil over medium heat. Brown onions and garlic. Add sausage and chicken broth. Cook for 15 minutes, stirring occasionally.

3. Add pumpkin, nutmeg, salt, pepper and sage to the sauce. Stir to combine. Cook for 5 minutes. Add cooked pasta to your pan. Mix. Top with grated Parmesan. Enjoy!

  • 1-pound box of rigatoni
  • extra-virgin olive oil
  • 1 yellow onion
  • 4 cloves garlic
  • 1 pound Italian sausage, browned
  • 2 1/2 cups chicken broth
  • 2 cups canned pumpkin
  • sage
  • 1 teaspoon nutmeg
  • salt + pepper, to taste
  • Parmesan cheese

    Add cooked pasta to your pan. Mix.

    Top your pasta with fresh Parmesan and some chopped sage.
