This Chickpea Curry And Loaded Sweet Potato Recipe Is The Perfect Fall Meal!

Fall is all about comfort. From comfortable outfits to comfort foods, this season is all about warmth and well-being. This Curry Chickpea-Loaded Sweet Potato recipe developed by Rebecca Firskerfits right into the comfy agenda, plus it's quick to make and affordable (clocking in at $9.95 for 3-4 servings!).

With Heyday’s Coconut Curry Chickpeas front and center, a fork-tender steamed sweet potato and limey cilantro rice make an ideal landing pad. A shower of quick-pickled onions and a bit of toasted sesame oil over the top, and you’ll wonder why you ever bother with those pricey mediocre restaurant entrees.

This meal is fairly substantial as is, but if your dinner company seems especially hungry, make a bit of extra rice and/or use two cans of beans.

Ingredients For Your Chickpea Curry Recipe

  • 3-4 medium (2 ½ to 3 pounds total) mixed sweet potatoes
  • 1 cup long-grain rice, such as basmati or jasmine
  • 1 ounce (about ¼ bunch) cilantro (leaves and all stems)
  • ¼-½ teaspoon chile flake
  • 1 lime or lemon
  • ½ small red onion
  • Kosher salt and freshly ground black pepper
  • 1 (15-oz) can Coconut Curry Chickpeas
  • Toasted sesame oil or good olive oil, for serving

Instructions

  1. Scrub the sweet potatoes and halve lengthwise. Fill a medium pot with about 1 inch of water, then fit in a steamer basket. Cover and bring to a boil over medium heat. Place potatoes in the steamer basket, reduce heat to medium low, and recover. Steam until the potatoes are fork-tender, about 25 minutes.
  2. Meanwhile, zest the lime and reserve in a small bowl; juice the lime into another small bowl. Rinse the rice until water runs clear. Place in a medium pot with a pinch of salt and 1 ¾ cup water. Bring to a boil over medium high heat, then reduce to low, cover the pot and cook until the water has absorbed, about 15 minutes. Remove from heat and let steam, covered, for 10 minutes. (Alternatively, cook in a rice cooker according to manufacturers’ instructions.) Before serving, finely chop the cilantro and stir into the rice along with reserved lime zest.
  3. Halve and thinly slice the onion through the root end, then toss with the lime juice, chile flake, a big pinch of salt, and lots of black pepper. Set aside.Heat the chickpeas in a small saucepan over medium-low, string occasionally, until warmed through, about 5 minutes.
  4. Divide rice between plates. Gently smash sweet potatoes with a fork and season with salt. Top with chickpeas and pickled onions, then drizzle with sesame oil.

On OprahDaily.com and CBS Mornings, Oprah Winfrey excitedly shared her book club's 104th pick: The Many Lives of Mama Love by Lara Love Hardin. In a touching video, Oprah can be seen surprising Hardin in what feels like a "full circle moment." While trying to process her book being chosen as Oprah's next book club pick, Hardin can be heard saying, "I'm just overwhelmed right now. I'm so grateful."

It's a memoir that details how Hardin's past addiction to opiates caused her to make dire decisions that led her to serve jail time. Not only that, but Hardin eventually finds a way to show herself grace as she reconnects with her children and becomes an ally for other women who are incarcerated.

As you get comfortable making beginner recipes in the Instant Pot like eggs and salmon, it may be time to graduate to slightly more complex cookery and seasonings. However, you really want an expert to guide you when you're exploring world cuisines like Indian food. One of our absolute favorite Instant Pot cookbooks is The Essential Indian Instant Pot Cookbook by Archana Mundhe. The cookbook is authorized by Instant Pot itself, but we've cooked through at least a dozen of its recipes and can attest to its awesomeness. We're particularly smitten with the Instant Pot butter chicken, so we asked Mundhe if we could pretty please make it in our test kitchen and photograph the steps as we believe this is a fundamental recipe you'll want to make over take-out. She happily agreed.

We love this recipe, because it pressure cooks in 5 minutes and simultaneously steams the rice on top of the tomatoey, spicy chicken. Score! We like buying Trader Joe's naan in the freezer section and toasting it in the oven, slathered with plenty of turmeric-y ghee. You can also spread butter and sprinkle on a little powdered turmeric as well.

Recipe Notes: Use chicken breast or thighs — dark and white meat turn out lovely in this recipe. Specialty spices like Kashmiri red chile powder and fenugreek leaves can be ordered online or found at Indian supermarkets or healthy grocery stores. Sugar, although optional, is recommended as it will cut through the acidity of the tomatoes. We added coconut sugar to our version.

Ingredients 

  • 2 tablespoons ghee
  • 1 large yellow onion, finely diced
  • 2 pounds boneless, skinless chicken thighs, halved and patted dry
  • 1 cup canned tomato puree
  • 1/2 cup water
  • 1 tablespoon grated fresh ginger
  • 1 tablespoon minced garlic
  • 2 teaspoons Kashmiri red chili powder or another mild red chili powder
  • 2 teaspoons kosher salt
  • 1 teaspoon garam masala
  • 1/2 teaspoon ground turmeric
  • 1/2 cup canned coconut cream
  • 2 tablespoons tomato paste
  • 2 tablespoons dried fenugreek leaves
  • 2 teaspoons sugar (optional)
  • 1/2 cup chopped fresh cilantro
  • 1 cup basmati rice
  • 1 1/2 cups water
  • 1 teaspoon kosher salt

Directions

Select the high Sauté setting on the Instant Pot and heat the ghee. Add the onion and cook until translucent, 4 to 5 minutes. Press the Cancel button to turn off the Instant Pot. Add the chicken, tomato puree, water, ginger, garlic, chili powder, salt, garam masala, and turmeric and stir to combine.

To make the rice: In a 1 1/2-quart stainless-steel bowl that will fit in the Instant Pot, stir together the rice, water, and salt. Place a tall steam rack in the pot, making sure its legs are resting on the bottom. Place the bowl of rice on the rack.

Secure the lid and set the Pressure Release to Sealing. Select the Pressure Cook or Manual setting and set the cooking time for 5 minutes at high pressure.

Let the pressure release naturally for 5 minutes, then move the Pressure Release to Venting to release any remaining steam. Open the pot. Using heat-resistant mitts, place the bowl of rice on a trivet and remove the tall steam rack.

Add to the pot the coconut cream, tomato paste, fenugreek, and sugar and stir to combine. Select the high Sauté setting and cook until the curry comes to a boil and is heated through, about 2 minutes. Press the Cancel button to turn off the Instant Pot.

Spoon the rice onto plates and ladle the curry over the top. Sprinkle with the cilantro and serve the most delicious instant pot butter chicken you've ever made!

"Do you realize this July is the 20th anniversary of A Cinderella Story?" Chad Michael Murray asks the camera. "Next week, we're going to do a little Austin Ames wink and nod to at the fans. You'll see."

There are literally so many things Chad could do in honor of the anniversary, which is happening July 16. The actor has played basketball at his One Tree Hill reunions, so maybe he'd play some football. He could also break out his old costume or reenact the iconic "Waiting for you is like waiting for rain in this drought. Useless and disappointing," scene with Hilary Duff — but TBH I hope whatever he does, he does it with Hilary. This would be the reunion I've been waiting for!!

Chad Michael Murray has talked about the fun of filming A Cinderella Story in the past — and how hilarious it is his character supposedly couldn't recognize Hilary Duff in the mask. "If you go to masquerade mall and a girl you see almost every day is wearing a small mask and her entire face is exposed and you still can't recognize her, you should probably see an eye doctor... among a few other doctors," he jokes with E! News.

If there's one word to describe Bridgerton, it's romantic. The costumes, the makeup, the press tour moments between season 3 leads Nicola Coughlan and Luke Newton — all of it leaves me giggling and kicking my feet. And apparently, love might be in the air for two other Bridgerton cast members: Luke Thompson and Harriet Cains!

Luke Thompson (who plays Benedict Bridgerton) and Harriet Cains (Philippa Featherington) were spotted at the Vanity Fair EE BAFTA Rising Star Party together, and they were getting cozy. The deeper I go into the rabbit hole the more I find and suddenly, this is my favorite (potential) celebrity couple!

These besties are clearly so comfortable around each other, and aren't afraid to get up close and personal. (A fact that might scandalize Harriet's character Philippa Featherington. It seems pretty par for the course for Benedict Bridgerton). Luke Thompson and Harriet Cains might be the couple I'm rooting for, but fans are also hoping to see Benedict find love with Sophie Beckett in Bridgerton season 4. And Luke is expecting to learn even more about his character the longer the show sticks around.

"The more you stay with a character, the more you start to see the chinks in the armor, a bit of vulnerability," he told Vestal Mag in 2022. "Benedict is no exception this season, no matter how blasé he seems to want to be."

I love seeing how Benedict isn't afraid to be his goofy self, and how much he looks out for his siblings (particularly Eloise, which is my favorite relationship on the show!), but things might change once he really, truly falls in love. I don't think Sophie will make him act any less himself, but I'm excited to see how she brings out different parts of his personality we haven't seen yet — and emphasizes the aspects we know and love.
