6 Common Instant Pot Mistakes You Might Be Making

These days it seems like everyone and their mom is talking about the Instant Pot. Who can really blame them, especially when the gadget promises to make fall-off-the-bone tender meat in less than 30 minutes? It’s so popular, it seems the multi-purpose tool has become the Crock-Pot of millennials. But, unlike slow-cookers, which typically have one or two straightforward settings, an Instant Pot has 16 different buttons, numerous different capabilities (like rice- and yogurt-making), and therefore more room for error. If you’re just about to crack open that Instant Pot for the first time, these are the six mistakes you might run into and how to fix them.

1. You didn’t add enough liquid; you added too much; or you used the wrong kind.

Since an Instant Pot primarily functions as a pressure cooker, it’s absolutely essential that you add liquid in some form or another to the pot before you start cooking, otherwise things could get messy. On the other hand, you also don’t want to add too much liquid. That could increase the pressure release time, which may leave you with overcooked food. In general, always add between 1/2 to 1 cup of liquid.

As for what kind of liquid to add, you need one that will evaporate into steam, since the pressure cooker setting on your Instant Pot uses steam to cook the food. Avoid creams or sauces, like cream of mushroom soup or marinara. You’ll also want to steer clear of adding thickeners like cornstarch or tapioca flour, as those can also inhibit the ability of the liquid to steam.

2. You filled the pot up more than halfway.

When pressure cooking, you’re never supposed to fill the pot up more than halfway. When it’s too full, it takes longer to depressurize, which can lead to overcooked food. Alternatively, the pot may have trouble getting fully pressurized if it’s too full. There is one caveat: When you’re slow-cooking, you can fill it up toward the measuring lines at the top of the pot.

3. You’re adding all your ingredients at once.

As nice as it would be to just throw everything in the pot and chill for 15 minutes, different ingredients cook at different rates (for example, rice and beans). Start with the basics and cook grains first, then beans, and so on. Then practice and stick to trustworthy recipes to learn what works and what doesn’t.

4. You followed a recipe for a standard pressure cooker.

Old fashioned pressure cookers actually cook differently than an Instant Pot. Over the stovetop, old-school pressure cookers can get up to pressure faster than an electrical Instant Pot. If you’re using a recipe that calls for a traditional pressure cooker rather than what you have, you’ll have to factor in a little more cooking time to get the same result.

5. You didn’t open the pressure valve fast enough.

When the timer’s up, release the pressure valve right away. If you wait even for a couple of minutes it might result in mushy food. Yuck.

6. You forgot to put the inner pot back in after you finished cooking.

Skip this step and you may wind up throwing your ingredients into a bare Instant Pot. Gasp! You’d be surprised how often it happens to avid Instant Pot-users. The same goes for the sealing ring. When you’re done cleaning everything, put it all back together, so it’s ready the next time you want to get cooking.

As you get comfortable making beginner recipes in the Instant Pot like eggs and salmon, it may be time to graduate to slightly more complex cookery and seasonings. However, you really want an expert to guide you when you're exploring world cuisines like Indian food. One of our absolute favorite Instant Pot cookbooks is The Essential Indian Instant Pot Cookbook by Archana Mundhe. The cookbook is authorized by Instant Pot itself, but we've cooked through at least a dozen of its recipes and can attest to its awesomeness. We're particularly smitten with the Instant Pot butter chicken, so we asked Mundhe if we could pretty please make it in our test kitchen and photograph the steps as we believe this is a fundamental recipe you'll want to make over take-out. She happily agreed.

We love this recipe, because it pressure cooks in 5 minutes and simultaneously steams the rice on top of the tomatoey, spicy chicken. Score! We like buying Trader Joe's naan in the freezer section and toasting it in the oven, slathered with plenty of turmeric-y ghee. You can also spread butter and sprinkle on a little powdered turmeric as well.

Recipe Notes: Use chicken breast or thighs — dark and white meat turn out lovely in this recipe. Specialty spices like Kashmiri red chile powder and fenugreek leaves can be ordered online or found at Indian supermarkets or healthy grocery stores. Sugar, although optional, is recommended as it will cut through the acidity of the tomatoes. We added coconut sugar to our version.

Ingredients 

  • 2 tablespoons ghee
  • 1 large yellow onion, finely diced
  • 2 pounds boneless, skinless chicken thighs, halved and patted dry
  • 1 cup canned tomato puree
  • 1/2 cup water
  • 1 tablespoon grated fresh ginger
  • 1 tablespoon minced garlic
  • 2 teaspoons Kashmiri red chili powder or another mild red chili powder
  • 2 teaspoons kosher salt
  • 1 teaspoon garam masala
  • 1/2 teaspoon ground turmeric
  • 1/2 cup canned coconut cream
  • 2 tablespoons tomato paste
  • 2 tablespoons dried fenugreek leaves
  • 2 teaspoons sugar (optional)
  • 1/2 cup chopped fresh cilantro
  • 1 cup basmati rice
  • 1 1/2 cups water
  • 1 teaspoon kosher salt

Directions

Select the high Sauté setting on the Instant Pot and heat the ghee. Add the onion and cook until translucent, 4 to 5 minutes. Press the Cancel button to turn off the Instant Pot. Add the chicken, tomato puree, water, ginger, garlic, chili powder, salt, garam masala, and turmeric and stir to combine.

To make the rice: In a 1 1/2-quart stainless-steel bowl that will fit in the Instant Pot, stir together the rice, water, and salt. Place a tall steam rack in the pot, making sure its legs are resting on the bottom. Place the bowl of rice on the rack.

Secure the lid and set the Pressure Release to Sealing. Select the Pressure Cook or Manual setting and set the cooking time for 5 minutes at high pressure.

Let the pressure release naturally for 5 minutes, then move the Pressure Release to Venting to release any remaining steam. Open the pot. Using heat-resistant mitts, place the bowl of rice on a trivet and remove the tall steam rack.

Add to the pot the coconut cream, tomato paste, fenugreek, and sugar and stir to combine. Select the high Sauté setting and cook until the curry comes to a boil and is heated through, about 2 minutes. Press the Cancel button to turn off the Instant Pot.

Spoon the rice onto plates and ladle the curry over the top. Sprinkle with the cilantro and serve the most delicious instant pot butter chicken you've ever made!

I have such a love/hate relationship with haircuts. While I love the feeling of a fresh look as much as the next girl, I hate having to spend $100+ for a simple cut and blow dry session. During my recent trim, I talked with my hairdresser, Jack Rehak of Jack’s Hair Design in Hinsdale, Illinois, about ways to keep a haircut looking new and best practices for keeping hair healthy. Here's what he had to say!

Here's How Often You Should Cut Your Hair, According To Professionals

I’ll admit it — it had been eight months since my last haircut. My hair had lost its shape, my layers were nowhere to be found, and my ends were begging for mercy. Life got busy over the last few months and I was neglecting my haircare like never before.

My hairdresser could immediately see that I was beyond due for a cut and said I needed to get more taken off than I was hoping. I was definitely disappointed — I'd been working on growing out my hair for a while now, and it just felt like my hard work had completely gone to waste. He explained that getting consistent haircuts is the key to growing out healthy and strong hair, rather than letting it grow and grow until it eventually breaks. So let's dig into the top three things you can do to avoid this scenario!

1. Just Get The Dang Haircut

Also avoiding a haircut like I was? You might want to schedule one at your nearest salon. Like my stylist said, when you wait too long between trims like I did, you risk your hair becoming heavy, dull, and lifeless. When the hair is dry or even dead, it’s nearly impossible for it to hold a curl or style, essentially collapsing on you and taking on more and more heat damage all the while. I know the pain of spending time on a blowout only for it to fall minutes later — it’s the worst.

According to Jack, getting a haircut every 10-12 weeks is the best time frame or your ends will pay the price. Between blow-drying, curling, straightening, sun, and weather, our ends get dry and start to break without the proper care. Getting consistent haircuts allows hair to bounce back, shine, and perform the way we want in a healthy way.

2. Leave-In Conditioners Are Your Friend

His top piece of advice to keep your hair looking and feeling hydrated between trims? Invest in conditioning treatments. Jack’s advice is to switch brands after finishing every bottle of shampoo to bring life back to your hair. Have two brands that you’re loyal to? Even switching back and forth between them after every bottle should make a big difference in your hair. In the end, navigating your back-and-forth relationship with haircuts often feels like a rollercoaster ride between wanting that fresh look and cringing at the receipt. Luckily, by using conditioning treatments and switching up your products,, you can keep your locks healthy, shiny, and full of life between trims. But take a newly learned lesson out of my book: don't let your ends pay the price for procrastination and just book the haircut.
