20 Savory Brunch Recipes That Are Totally Egg-cellent

Gearing up for a big Easter brunch in a couple weeks? Us too. And we’re all about serving up eggs in every which way, from deviled to baked to fried inside a freaking onion ring! To prep for this year’s Sunday feast, here are 20 savory egg recipes that are truly egg-cellent.

1. Cauliflower Crust Breakfast Pizza: First up, pizza for breakfast. And better yet, make it gluten-free by making a cauliflower crust! (via Brit + Co.)

2. Egg, Mushroom, Bacon Tart: How yummy do these tarts look? Using a tart pan and pie crust or pre-made crusts, fill ’em up with bacon, feta, mushrooms, and an egg and you’re good to go. (via Amateur Cook Professional Eater)

3. White Cheddar and Dijon Baked Eggs: Whoa. Cheddar and dijon are getting a serious upgrade in this scrumptious-looking dish. We think it would be delicious paired with crusty bread. (via Averie Cooks)

4. Shredded Sweet Potatoes With Eggs, Chimichurri and Fresh Salsa: This looks so flavorful — perfect for a brunch that morphs into “linner.” (via An Avocado a Day)

5. Roasted Tomatoes and Gorgonzola Popunder: Pretty much any combination of herbs, cheese and tomatoes will render this recipe perfect. (via lab@56)

6. Steel Cut Oats, Pecorino and Poached Egg: We have yet to try the savory oat thing, but we love the sound of these flavors mixing together. (via Familystyle Food)

7. Baked Eggs in Avocado with Bacon: This isn’t the first time we’ve featured this picturesque treat. If you’re a veggie, try subbing sun-dried tomatoes for bacon. (via White On Rice Couple)

8. Breakfast Carbonara Pasta: Pasta for breakfast might be the new pizza for breakfast. (via The Delicious Life)

9. Baked Eggs in Bread Cases: For a bite-sized treat that’s perfect for a potluck, try these pita bread breakfast cups. (via Lanas Recipes)

10. Mahi Mahi Banh Mi With Spicy Curried Mayo and Fried Eggs: Just the title of this is mouthwatering! Love this breakfast-y take on Banh Mi. (via Half Baked Harvest)

11. Fried Eggs Inside an Onion Ring: Yeah. They did that. (via Simple Comfort Food)

12. Deviled Guacamole Eggs: For a slightly healthier take on deviled deliciousness, add avocado to the mix. (via The Food Charlatan)

13. Zucchini Pancakes with Avocado and Egg: This powerful breakfast includes gluten-free pancakes. Woot woot! (via Brit + Co.)

14. Harissa Zucchini Spaghetti Skillet With Kale, Chickpeas and Poached Eggs: For folks who like brunch for the lunch part of the deal, this skillet dish is just what the doctor ordered. (via Inspiralized)

15. Chive Pancakes: You know those scallion pancakes you get at Chinese restaurants? These are like that, but times ten. With way more chives, fresh ingredients and plenty of room for improvisation, this is a recipe worth adding to your regular weekend rotation. (via Daily Cooking Quest)

16. Cast Iron Baked Eggs in Tomato Sauce: We do love the power of a cast iron, especially when it comes to making a morning stew of savory goodness. (via The Baking Bird)

17. Eggs in Chili Clouds: We’ve marveled over this creation before. We like to think of this one as a reconstructed egg. You separate the yolks from the whites and whip the whites into chili clouds with parmesan, chili pepper, and any other herbs you like. Return the yolk to the white and bake! (via Kitchen Tested)

18. Breakfast Grilled Cheese: This takes your love of egg-and-cheese-on-a-roll to a way toastier level. (via Soup Addict)

19. Spicy Baked Eggs With Sweet Potatoes: Admittedly, the first thing we noticed about this yummy dish was the gorgeous Staub mini baking pots. We’re also definitely digging the idea of a spicy sun dried tomato and curry sauce. (via Crepes of Wrath)

20. Savory Big Brunch Grits: And finally, brunch fit for a big hungry crew. See also: What to serve on New Year’s Day ;) (via Peaches Please)
