Can you believe the 4th of July is almost here? If you鈥檙e going to an epic Independence Day party, you鈥檙e gonna want to make sure you bring an epic all-American dessert with you. Our suggestion? Celebrate with our Raspberry Poke Cake! Read on for the recipe.

Ingredients:

鈥 2 boxes white cake mix

鈥 2 1/2 cups water

鈥 6 eggs

鈥 2/3 cup vegetable oil

鈥 3 cups raspberries

鈥 1/2 cup granulated sugar

鈥 1 lemon

鈥 2 Tablespoons cornstarch

鈥 1 1/4 cup water

鈥 3 cups heavy whipping cream

鈥 2 teaspoons vanilla extract

鈥 assorted berries, to garnish

Instructions:

1. Preheat oven to 350 degrees Fahrenheit. Line a 13 x 9-inch baking sheet with parchment paper. In a large bowl, combine the cake mix, water, eggs and vegetable oil. Mix. Pour batter into sheet pan. Bake for 25 minutes, until golden brown. Let cool five minutes.

2. In a medium saucepan, combine raspberries, sugar, zest of one lemon, juice of one lemon, 1 1/4 cups water and cornstarch. Bring the mixture to a boil over medium heat. Simmer for five minutes, stirring constantly.

3. Using the handle of a wooden spoon, poke the cake every inch or so. Spoon raspberry sauce evenly over the cake. Chill for one hour.

4. In a stand mixer, beat heavy whipping cream and vanilla until soft peaks form. Top cake with whipped cream and fresh berries. Enjoy!
