When we’re cooking with good health in mind, chicken is a go-to ingredient for us. It’s an inexpensive (relative to other meats) source of protein, hearty and delicious. The beauty of the slow cooker is, you can prep the ingredients in the morning or even the night before, dump everything into your slow cooker and head off to work. Chunks of chicken are marinated in a light apple cider vinaigrette, speared with rosemary sprigs and grilled to perfection. Brittany shares the secret for turning sturdy sprigs of rosemary into skewers. You simply strip the rosemary needles, which you can use in the marinade, then soak the sprigs in water while the chicken is marinating in the fridge.
