This Tasty Ube Coconut Cake Recipe By Arlyn Osborne Is The Perfect Spring Dessert

Ube Coconut Cake Recipe By Arlyn Osborne

With sweet treat recipes that range from Yakult Leches Cake and Marbled Ube Banana Bread to Mochi-Stuffed Chocolate Chip Cookies and Pandan Coconut Cream Pie, recipe developer, content creator, and now-author Arlyn Osborne’s Sugarcane: Sweet Recipes from My Half-Filipino Kitchen is packed with a whole rainbow of magical Filipino desserts. The debut cookbook celebrates her Filipino heritage by fusing traditional dishes with Western methods widely used in the states, and wow, is it wonderful.

The 80 recipes in Sugarcane illustrate Arlyn’s earliest memories surrounding food, and some have even followed her since her middle school days. In fact, the book’s cover honors pandesal, the popular Philippine bread rolls that brought her closer to her family overseas than ever before (in her words: “It’s iconic. A national treasure.”).

Though you’d never guess it from the look of her colorful treats, Arlyn didn’t grow up cooking. As she describes it, going all-out for everyday meals wasn’t exactly her parents’ thing.

“Cooking was something that was mostly reserved for special occasions like holidays, birthdays, celebrations, that sort of thing,” she says. “It just wasn't worth the trouble to them. Most of our meals were just fast food or frozen Kids Cuisine dinners.”

Arlyn says her childhood was “dysfunctional,” and this detachment from food was just a small part of the picture. Despite an absence of physical affection and frequent “I love you”s at home, Arlyn let her undying love for Food Network and a strong sweet tooth sweep her away into the culinary world.

After years of working in food styling and production, writing about food, and developing recipes, Arlyn’s using her first cookbook to communicate her passion for cooking and baking, as well as carry on the legacy of Filipino food to ultimately find her place in it all.

“I think over the years, I have become sometimes a little uncomfortable to say some of the things I wish I could say out loud,” she says. “For me, food is the way for me to say those things without actually saying them.”

About The Recipes

Sugarcane: Sweet Recipes from My Half-Filipino Kitchen by Arlyn Osborne

Flipping through the recipes in Sugarcane, you may see a few ingredients that aren’t very common in Western cooking listed – like pandan, tamarind, ube, calamansi, star fruit, mochi, and rambutan – but there’s familiarity in each one of them.

Arlyn wrote Sugarcane for both people who are familiar with Filipino food, and those who are not. Either way, the recipes will guide you to greatness.

“I get that it can be a little intimidating for people to try out ingredients or desserts they've never heard of before, but I do think that people should know that if they're cooking from my cookbook, they’re going to be okay,” she says. “I think everyone’s going to feel that they're personified in each recipe a little bit.”

From The Book: Ube Coconut Cake

Arlyn’s Ube Coconut Cake recipe pulls inspiration from ube cake (the “crown jewel” when it comes to Filipino cake) and lucious coconut cakes from the American South. Ube halaya, which is essentially an ube jam, is the star of the coconut cake recipe, lending a gorgeous purple hue to the tender layers. Everything gets sandwiched in between and smothered in a sweet coconut icing *so* yummy, you’ll quickly see why Arlyn makes it every year for her birthday.

Ingredients for Ube Coconut Cake

Ube Cake

  • 3 cups (375 g) all-purpose flour
  • 1 tablespoon baking powder
  • 1 ½ teaspoons kosher salt
  • ¾ teaspoon baking soda
  • ¾ cup (186 g) ube halaya, at room temperature
  • 2 ¼ cups (450 g) granulated sugar
  • 6 large eggs, at room temperature
  • 1 tablespoon ube paste
  • 1 ½ cups (360 g) buttermilk
  • 1 ½ cups (315 g) neutral oil

Coconut Frosting

  • Two 16 oz. (454 g) containers sour cream
  • 4 cups (800g) granulated sugar
  • ¼ teaspoon kosher salt
  • 14 cups (700g) unsweetened shredded coconut

How to Make Ube Coconut Cake

For the Ube Cake

  1. Preheat the oven to 350 degrees F (180 degrees C). Grease two 9-inch round cake pans with cooking spray and line the bottoms with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, salt, and baking soda.
  3. To the bowl of a stand mixer fitter with the whisk, add the ube halaya and beat until smooth. Add the sugar and beat on medium-high speed until combined but not creamed. The sugar should look moist, crumbly, and purple.
  4. Add the eggs and ube paste and beat on medium speed until combined, about 30 seconds. Add the buttermilk and oil and beat until combined, about 30 seconds.
  5. Sift in half of the flour mixture and whisk by hand until just combined. Repeat with the remaining flour mixture and whisk until just combined.
  6. Divide the batter evenly between the prepared cake pans. Bake until a toothpick inserted into the center of the cakes comes out clean, 35 to 40 minutes.
  7. Transfer the pans to a wire rack and let cool for 10 minutes. Run a small offset spatula around the perimeter to loosen the edges. Invert the cakes onto the wire rack. Remove the parchment and invert again onto wire racks so they sit right side up. Let cool completely.

For the Coconut Frosting

  1. To the bowl of a stand mixer fitted with the paddle, add the sour cream, sugar, and salt. Beat on low speed until combined. Add a third of the coconut and beat on low speed until combined. Repeat two more times.

To assemble

  1. Place one cake layer (top side up) on a cake plate. Top with 2 cups (450 g) of frosting and spread evenly. Top with the second cake layer (bottom side up).
  2. Cover the top evenly with 2 ½ (560 g) cups of frosting. Use the remaining frosting for the sides. Wrapt the cake all over with plastic wrap so it touches the frosting directly and protects the cake from air. Refrigerate overnight. As it sits, both the cake layers and coconut shreds will soak up excess moisture from the frosting.
  3. Let the cake sit out at room temperature for 1 hour to take the chill off before serving. Due to the nature of the frosting, it's best to use a serrated knife to “saw” through the cake into slices.

Oprah Winfrey is much more than a legend. She's one of the reigning stars of daytime TV, creating such a memorable empire that just her first name carries weight. She's full of wisdomand loves celebrating the success of others. Excuse me, that's grounds for a standing ovation.

In addition to all of the things she's accomplished, Oprah has steadily added books to her book club list since 1996. To date, there are 105 titles she's read and chosen to share with others. If you're thinking, "That's a lot of books" then I agree. But, her goal is to highlight both seasoned and new writers who dare to weave together fiction as well as nonfiction works.

After going through the list, here's everything we think you need to add to your at-home library.

Image via Oprah Daily/Eli Schmidt

Yesterday, Oprah announced her book club's 105th pick On OprahDaily.com and CBS Mornings, where she appeared with author Colm Tóibín to discuss his newly released book Long Island. She had nothing but praise for the novel and said, "I was captivated. Tóibín builds the story around a woman whose life changes seemingly overnight with the news of her husband’s infidelity. It opens the door to her own secrets, grappling with choices she made long ago, urging her to break free from the silences she built around her life. A wonderful page-turner to start your summer reading.”

On OprahDaily.com and CBS Mornings, Oprah Winfrey excitedly shared her book club's 104th pick: The Many Lives of Mama Love by Lara Love Hardin. In a touching video, Oprah can be seen surprising Hardin in what feels like a "full circle moment." While trying to process her book being chosen as Oprah's next book club pick, Hardin can be heard saying, "I'm just overwhelmed right now. I'm so grateful."

It's a memoir that details how Hardin's past addiction to opiates caused her to make dire decisions that led her to serve jail time. Not only that, but Hardin eventually finds a way to show herself grace as she reconnects with her children and becomes an ally for other women who are incarcerated.

For a sneak peek of what you can expect in the novel, read an exclusive excerpt on OprahDaily.com!

Long Island by Colm Tóibín

Long Island tells the tale of Eilis Lacey and the discovery of her husband's infidelity. Things start off well enough with Eilis and her husband Tony Fiorello living near his family. The family spends a lot of time together and it feels like they have a quintessential bond that can't be broken.

But when Eilis discovers that a man's wife is carrying Tony's child and they don't want anything to do with the baby, she begins to start looking at her own desires as well as the things she's kept secret for the sake of her marriage. She ends up journeying to a familiar place to rediscover herself and it ignites an inner flame that she thought she lost.

Stop what you’re doing! Folks, the Starbucks summer menu is in full swing, and you need to try it now. The chain – in addition to the spicy drinks that hit menus on April 16 – just launched a never-before-seen lineup of Refreshersthat include popping boba – just as we predicted! Starbucks also introduced a few fruityfood items, too.

The new items on the Starbucks summer menu are the perfect fit for the season. Scroll on for everything you can order now, plus a review of the spicy Refreshers so you can suss 'em out for yourself.

When did the Starbucks summer menu come out?

The Starbucks summer menu came out in two different phases: the spicy Refreshers launched on April 16, while the boba drinks and more come out on May 7.

Does Starbucks have boba?

Photo by Telly Mina / PEXELS

Yes – with the new summer menu items, Starbucks officially has boba!

Starbucks has never served boba nationwide before this, but they did test it regionally for a brief period in late 2021. According to Tasting Table, only two Starbucks locations (one in California, one in Washington) tested out coffee boba pearls back then. The pearls were also popping boba (like the new summer drinks), but weren't received super well.

One person that tried the boba drinks in 2021 said the pearls were "really small and awkward to drink." People engaging in online discourse about the coffee boba pearls weren't happy about the attention and revenue the boba could potentially take away from small businesses serving authentic Taiwanese boba.

Everything On The Starbucks Summer Menu

NEW! Summer-Berry Starbucks Refresher

The Starbucks summer menu lists a brand-new line of iced Refresher drinks, with the Summer-Berry flavor leading! And... it has boba!

This new sip is described as "a sweet summer blend of raspberry, blueberry and blackberry flavors mixed with water, lemonade or coconut milk and shaken with ice." It's poured over raspberry-flavored popping boba, which amps up the berry vibes even more!

NEW! Summer-Berry Lemonade Refresher

This next sip is shaken with lemonade rather than water, which gives it a citrusy, zingy effect. Lemonade is the perfect bev for summertime, and I have a hunch it could pair really well with the raspberry boba pearls!

NEW! Summer Skies Drink Refresher

The Starbucks summer menu is heating up with this creamy drink! This one's essentially the Summer-Berry Refresher with a splash of coconut milk, much like the Starbucks Pink Dink. It also includes fruity boba! Starbucks will begin to supply wider green straws to help you sip up the pearls.

White Chocolate Macadamia Cream Cold Brew

We've seen this drink on Starbucks menus before, and it's made its return for summer 2024, and I am so excited. The White Chocolate Macadamia Cream Cold Brew features "Starbucks signature cold brew sweetened with macadamia syrup, topped with a silky white-chocolate macadamia cream cold foam and finished with toasted cookie crumbles," according to Starbucks.

I feel like nutty flavors are more fit for fall, but it's nice that Starbucks is offering an option for the warmer months with this returning iced coffee drink!

NEW! Orange Cream Cake Pop

The Starbucks summer menu also introduced a brand-new cake pop! The Orange Cream Cake Pop is described as "orange cream cake mixed with buttercream, dipped in chocolatey icing and finished with an orange slice design." The cute orange slice design honestly does it for me. I love an orange Dreamsicle!

NEW! Pineapple Cloud Cake

This new sweet snack is described as an "airy cake layered with a lightweight pineapple cream and pineapple spread with whole fruit pieces all topped with a sweet drizzle." It looks so yum.

What People Were Saying About The Starbucks Summer Menu Rumors

IG @markie_devo

The Starbucks summer menu rumors sparked a fair amount of excitement online. A few commenters on @markie_devo's initial menu leak post said the proposed lineup looks appetizing and exciting.

"Now this looks good 💯🔥," one person wrote. "Finally something DIFFERENT," another said.

Some Starbucks fans were anticipating entirely different drinks for the summer menu, like the S'mores Frappuccino that came out in 2019.

"Where's the smores frapp😫," the first comment reads. "Wish they’d bring back the S’mores Frappuccino 😔," another wrote.

Starbucks isn't the first big coffee chain to add boba to their menu. Dunkin' had featured strawberry-flavored popping pearls on their menu back in 2021, and Dutch Bros just debuted their version in February 2024. Some Starbucks customers commenting on the menu rumors noticed this.

"Stole from Dutch lmao," one person wrote. "Dunkin did it first lol. But these are super interesting," another said.

Starbucks Is Doing Something Spicy...

Spicy Dragonfruit Refresher

Rumors about some spicy Starbucks Refreshers were floating around the internet after @markie_devo posted a potential lineup. The first drink (of three new Refreshers) is the Spicy Dragonfruit Refresher. The drink is your traditional fruity Refresher, except shaken with lemonade and a new Spicy Chili Powder Blend to bring a nice kick of flavor!

I got to try it out first thing on launch day, and I have got to say that the spice in this drink somehow makes this the most "dragonfruit" dragonfruit drink I’ve ever had from Starbucks. And it's good! Of course, I expected my sips to be spicy, but I underestimated just how much spice would be included. I personally think it’s such a nice balance between sweet and spicy, but I could see where it may be too much for non-spice-lovers.

The spicy Refreshers will be available for limited time. They were released in stores on April 16, 2024.

Spicy Strawberry Refresher

The Spicy Strawberry Refresher is the most refreshing of all the spicy Starbucks drinks. It's just the OG Strawberry Refresher base shaken with zesty lemonade, ice, fruit bits, and the chili spice blend.

When I ordered the Spicy Strawberry Refresher, I was not expecting it to come out an orange color. Though unexpected, the spice in the drink was spicing nonetheless, and I thought it was pretty good! I had sipped this one first out of all three, but it ends up last in my overall Refresher ranking. I think the other bevs do a better job at highlighting the fruit – in this one, the strawberry flavors were undoubtedly eclipsed by the chili spice blend.

I bet it'd be so heavenly if you ordered it blended with ice, so it becomes a nice slushy texture!

Spicy Pineapple Refresher

I was most excited about this new Starbucks drink because in my opinion, pineapple and spice are a classic combo! I've eaten way too much Tajin-covered fruit in my lifetime, and I hoped for this drink to directly emulate those flavors! And y'all, it DELIVERED.

The drink is literally gorgeous. With the spice blend, the Pineapple Refresher takes on a orange-y hue, while the pieces of pineapple float at the top. Upon first sip, it tastes exactly like Tajin-covered fruit. I did notice that a lot of the spice blend sunk to the bottom of my cup, so I had to keep shaking it to mix it up. Not a big tradeoff though, for how deliciously fruity this drink is.

Spicy Cream Cold Foam

Starbucks is also offering Spicy Cream Cold Foam for a limited time. It's crafted with Starbucks classic cold foam and their new Spicy Chili Powder Blend, and you can add it to any iced drink!

I tried the Spicy Cream Cold Foam atop an iced mocha. I had a vision, okay?! I really wanted the chili and chocolate to blend together for a tasty Mexican chocolate feel. I admired the specks of spice in the cold foam before sipping down a swig.

My first impression was that the spice isn't as intense in the cold foam as it is with the Refreshers – it honestly made the drink more enjoyable. The chocolate in the mocha made it so tasty, balancing everything out with lots of sweetness. I think the Spicy Cream Cold Foam could be an amazing addition to other sweet coffee drinks like these for those seeking coffee-based bevs.

My Review Of Starbucks Spicy Refreshers

Photos by Meredith Holser

Because of the intensity of the spice, I also think the new Spicy Refreshers work best as a slow sipper. I found that when I drank them quickly, the spice became overpowering, and honestly, unenjoyable after a time. I still need to try the Refreshers with alcohol, but I think adding a lil' splash of tequila for an easy summer cocktail is the move. I could take to the park or a friend's place on a nice weekend. 👀 I can tell these are gonna keep me up and goin’ through summer!

What People Are Saying About The Spicy Starbucks Refreshers

In the wake of brand-new spicy drinks at Starbucks, some customers were thrown off by the initial menu rumors that @markie_devo posted.

"🤮 Kinda takes away the “refreshing” aspect lol," one person wrote. "But I guess people who like spicy stuff on fruit will be happy."

One Starbucks barista commented on the validity of the menu rumors, saying: "As someone who works at Starbucks, this isn’t fake, we got our chili powder in already 😃"

Somehow, we have reached the 20th anniversary of A Cinderella Story. (2004 really was THAT year. The Notebook, A Cinderella Story,Mean Girls). Behind the scenes of an interview with the Today Show, Chad Michael Murray (who played Austin Ames in the movie opposite Hilary Duff's Sam) teased some kind of celebration coming our way!

www.tiktok.com

Replying to @Mystery bagel tw: emotional ‼️ one of the most iconic scenes #cinderellastory #chadmichaelmurray

"Do you realize this July is the 20th anniversary of A Cinderella Story?" Chad Michael Murray asks the camera. "Next week, we're going to do a little Austin Ames wink and nod to at the fans. You'll see."

There are literally so many things Chad could do in honor of the anniversary, which is happening July 16. The actor has played basketball at his One Tree Hill reunions, so maybe he'd play some football. He could also break out his old costume or reenact the iconic "Waiting for you is like waiting for rain in this drought. Useless and disappointing," scene with Hilary Duff — but TBH I hope whatever he does, he does it with Hilary. This would be the reunion I've been waiting for!!

Chad Michael Murray has talked about the fun of filming A Cinderella Story in the past — and how hilarious it is his character supposedly couldn't recognize Hilary Duff in the mask. "If you go to masquerade mall and a girl you see almost every day is wearing a small mask and her entire face is exposed and you still can't recognize her, you should probably see an eye doctor... among a few other doctors," he jokes with E! News.

If there's one word to describe Bridgerton, it's romantic. The costumes, the makeup, the press tour moments between season 3 leads Nicola Coughlan and Luke Newton — all of it leaves me giggling and kicking my feet. And apparently, love might be in the air for two other Bridgerton cast members: Luke Thompson and Harriet Cains!

Luke Thompson (who plays Benedict Bridgerton) and Harriet Cains (Philippa Featherington) were spotted at the Vanity Fair EE BAFTA Rising Star Party together, and they were getting cozy. The deeper I go into the rabbit hole the more I find and suddenly, this is my favorite (potential) celebrity couple!

These besties are clearly so comfortable around each other, and aren't afraid to get up close and personal. (A fact that might scandalize Harriet's character Philippa Featherington. It seems pretty par for the course for Benedict Bridgerton). Luke Thompson and Harriet Cains might be the couple I'm rooting for, but fans are also hoping to see Benedict find love with Sophie Beckett in Bridgerton season 4. And Luke is expecting to learn even more about his character the longer the show sticks around.

"The more you stay with a character, the more you start to see the chinks in the armor, a bit of vulnerability," he told Vestal Mag in 2022. "Benedict is no exception this season, no matter how blasé he seems to want to be."

I love seeing how Benedict isn't afraid to be his goofy self, and how much he looks out for his siblings (particularly Eloise, which is my favorite relationship on the show!), but things might change once he really, truly falls in love. I don't think Sophie will make him act any less himself, but I'm excited to see how she brings out different parts of his personality we haven't seen yet — and emphasizes the aspects we know and love.
