14 Meatless Pizza Recipes That Prove You’re Not Missing a Thing

Meatless Mondays can be a great way to set yourself up for healthy eating all week, and you don’t have to subsist on raw vegan dishes and buddha bowls to do it. Pizza — that perennial comfort food — can help ease the transition to a more veggie-centric diet, and is sure to become a regular part of your meat-free cooking repertoire. While (TBH) there’s no more perfect food than a simple cheese slice, there are some deliciously creative toppings that will elevate pizza night to a whole new level. Arugula and olives, blueberries and feta, artichoke and caramelized onion, anyone? The list goes on. Whether you’re a full-time vegetarian or just looking to cut back on meat, here are 14 meatless pizzas that are all the inspo you need.

1. Roasted Garlic White Cheese Pizza With Arugula: This fresh and simple pie has all the savoriness we crave in a pizza. Homemade crust is smothered in white roasted-garlic sauce, covered with fresh mozzarella and fontina cheeses, baked to gooey perfection and hit with a mound of crisp, bright, lemony arugula salad to balance out the flavors. (via Show Me the Yummy)

2. Grilled Cherry, Goat Cheese and Arugula Pizza: Did you do a double take at *cherries* on pizza? If so, prepare for a new taste sensation. Sweet seasonal cherries complement bitter arugula and salty goat cheese, making a truly tasty triumvirate. Bonus: This one’s grilled, so you don’t even have to turn on the oven. (via Recipe Runner)

3. Classic Margherita Pizza: You can’t beat a fresh, simple classic. Margherita pizza showcases the best flavors of summer — vine-ripe tomatoes and fresh basil — for a grown-up take on plain cheese pizza. (via Sally’s Baking Addiction)

4. Kale Pesto Pizza: If you love pesto, you’ll dig this super-healthy version made with pecans and kale. A dash of red pepper provides just the right kick of heat. (via Cookie and Kate)

5. Spinach Artichoke Pizza: You know the spinach artichoke dip we all love so much? This pizza is like that, but served up on a crispy crust. Your taste buds will do the happy dance. (via Cooking Classy)

6. Rainbow Veggie Flatbread Pizza: This pie makes it easy to taste the rainbow. A crust of naan bread is slathered with spicy tomato sauce and mozzarella, then topped with your favorite vegetables. It’s as delicious to look at as it is to eat. (via Gimme Some Oven)

9. Blueberry, Feta and Honey-Caramelized Onion Naan Pizza: You might not think of fruit when you think of pizza, but plump blueberries pair perfectly with honey-caramelized onions. Every gooey bite delivers the salty, sweet, savory and spicy goodness you desire in a pizza. (via Kitchen Confidante)

10. Caramelized Onion Feta Spinach Pizza With White Sauce: This feta spinach pizza is exploding with so much flavor, you’ll salivate at just the look and smell of it. Even the die-hard carnivore at the table will be satisfied by the meaty mushrooms on top. (via Little Spice Jar)

11. Grilled Grape Brie and Arugula Flatbread Pizza: You know how well brie pairs with grapes on sandwiches and in salads, so why not apply that pairing to pizza? It’s got that sweet and salty combo that sets our tastebuds tingling. And the thin, grilled crust of this flatbread really delivers the goods. (via Tidy Mom)

12. Three Cheese Pesto Spinach Flatbread Pizza: What happens when you top a garlicky flatbread with homemade creamed spinach, three kinds of cheese and pesto? Your new fave pizza combo, that’s what. You’ll never get tired of this one. (via Peas and Crayons)

13. Socca With Beet-Top Pesto: This is for all the GF eaters in the house! A batter of chickpea flour and seasonings is ladled into a cast-iron skillet and baked until almost crisp. The finished deal is topped with braised shallots, walnuts and brussels sprouts. A true veggie lover’s pizza, it’s totally delicious and totally GF. (via Rooting the Sun)

14. Raw Pizza With Spinach Pesto & Marinated Vegetables: You might be saying, wait a minute, raw pizza? But this is the real deal. Crushed nuts and seeds make a credible crust for the spinach pesto sauce and veggies. You might want to top it off with a nut cheese or cashew créme for good measure, but it’s delicious on its own. Hearty dinner recipes are always going to be high on our list, but spring and summer tend to call for light lunch ideas to keep us energized and able to enjoy longer hours of sunshine everyday. I'll be the first to say that eating chicken pasta or pizza for lunch often makes me feel sluggish, so I try to stay away from them during the work day. Not only that, but I've noticed I feel better when I eat something that's a little fresher and healthier. If your summer plans include having as much energy as possible, here's 15 light lunch ideas to help you successfully get through your days!

Light Lunch Ideas: Tasty Salads

Chicken Tzatziki Avocado Salad

Light lunch ideas don't have to be tasteless just because they don't cause you to feel sleepy in the middle of the day. One of the best ways to enjoy something tasty is to make a Mediterranean dish. This chicken tzatziki avocado salad is full of season, roasted chicken, feta, kale, and creamy tahini sauce. (via Half Baked Harvest)

Roasted Golden Beet Salad with Farro

This recipe had us at goat cheese! If you haven't had a chance to try it yet, this roasted golden beet salad with farro is a great way to introduce it to your palate. It also features shallots, thyme, and honey to balance out the crunch you'll get from the almonds! (via Brit + Co)

Chicken Cobb Salad

Add this chicken cobb salad your list of non-complicated light lunch ideas! It's full of tasty ingredients like avocados, cherry tomatoes, and eggs that'll hit the spot during lunchtime. (via Brit + Co)

Strawberry and Asparagus Salad with Chicken

Your salad needs an upgrade that involves lightweight fruit like strawberries. You can always exclude the chicken if you've been eating a meatless diet. (via Completely Delicious)

Feta Green Goddess Pasta Salad with Grilled Chicken

We're not sure who made this rule but pasta salad just seems to be one of the light lunch ideas that works extremely well for summer. This recipe features a homemade green goddess dressing that lightly covers the delicious ingredients, making it one of our favorite meals. (via Whole and Heavenly Oven)

Smashed Potato Spring Salad with Creamy Lemon Dressing

We love that this smashed potato spring salad can be eaten during summer. The Creamy lemon dressing complements the butter lettuce, asparagus, and green onions that you'll happily devour. (via Two Peas and Their Pod)

Simple Cold Pasta Salad

Simple light lunch ideas are the stuff that our summer dreams are made of. After all, meals like this cold pasta salad are great alternatives if you're truly looking for something quick and lightweight. (via Barley and Sage)

Summer Sesame Noodles

Is it a salad or noodle dish? Maybe it's both! One thing we know is that you'll get a ton of healthy vegetables and noodles drizzled in a sauce that has sesame paste, vinegar, and more! (via Gastro Plant)

Light Lunch Ideas: Creative Sandwiches, Tacos, and Wraps

Breakfast Bagel Sandwich with Smoked Salmon

Skipped breakfast? It happens to the best of us! Make up for it during lunch with this breakfast bagel sandwich with smoked salmon. Our mouths are already craving the herbed cream cheese that's on it. (via Vikalinka)

Smoked Turkey Sandwich with Spicy Mayo

Craving a smoked turkey sandwich that has a kick to it? Make this dish for lunch, but don't forget to bring something soothing to drink that'll help counter the mayo's spiciness! (via The Original Dish)

Tasty Tacos

Tacos Rancheros

This is technically another breakfast meal, but we like to think that some meals can double as light lunch ideas! This is a great option if you have to eat lunch early. (via Vanilla and Bean)

Kale Chicken Caesar Wraps

We're still deep in Vanderpump Rulesseason 11, but any good fans know the news never stops with this spicy crew. Whether their breaking stories about Scandoval or scorching friendships and starting feuds, there's just always something to talk about. The latest goss may not be what you're thinking though — according to Page Six(and Andy Cohen himself), production is fully paused on anything related to season 12. They have their alleged reasons for halting, but here's what I think is really happening.

Why did producers pause "Vanderpump Rules" filming for season 12?

It's been a major talking point during this season and its interview cycles that cameras basically went right back up after the Scandoval news broke, and they never really went back down for a full break. According to both production and Andy Cohen himself, Page Sixreported that they ultimately decided to press pause on anything season 12-related because wanted the cast to have a break after the almost nonstop Scandoval-fueled filming last year.

Will Ariana Madix return to "Vanderpump Rules" season 12?

Image via Bravo

I honestly don't think Ariana Madix plans to return to the Vanderpump Rules cast, and here's why:

  1. She's booked and busy. Between landing a hosting gig on Love Island, wrapping up a broadway show, scoring shoe deals, writing books, and beyond...it just makes sense that maybe Ariana's outgrown this world! She started on VPRwhen she was 28 years old — a full decade later, she's just a different person with likely different goals, especially after Scandoval.
  2. There was some allegedly big friendship-altering drama at the reunion. Since they filmed, there are plenty of rumors about who's still friends and why, but one thing is for certain: nobody's talking. And while obody will spill the beans on what was said yet, even Andy Cohen confirmed the reunion was "intense." My guess is that Ariana revealed to the cast that season 11 was her last, and that it sent everyone — especially Lala Kent and Scheana Shay — into a spiral. After all, this show is everyone's job at the end of the day, and Ariana leaving could potentially impact that. Still, like I said, she's likely outgrown the entire situation.
  3. Something About Her finally opening could mean their own show. Katie Maloney and Ariana announced onWatch What Happens Live!that their long-awaited sandwich shop is set to open on May 22. It's safe to say that the girls are EAGER to eat at this shop, with Tiktoks and Tweets galore asking about the opening for a while now...so why wouldn't Katie and Ariana wanna capitalize on that even more with their own show? It's obviously all speculation, but I could definitely see this being a successful, actually interesting VPR spinoff...I'm looking at you, The Valley.
Considering all this, my guess would be that production's working hard to make things work with Ariana, or find a way to break the news easy to the rest of the cast.

Who's returning for "Vanderpump Rules" season 12?

Image via Bravo

There aren't any formal announcements of returning Vanderpump Rules cast members — especially because the current season is still on air. However, one could safely assume almost everyone would choose to return, except for Ariana and maybe Katie (because have you ever seen someone more sick of every single man's BS on one show before?!). But, I'm not sure if we're even gonna get another season of this show, TBH. Why?

  • Nobody works at Sur anymore, and it just feels like we've moved so far past the original premise (and exciting drama) of the show.
  • Lisa Vanderpump (you know, THE Vanderpump in Vanderpump Rules) is hardly on anymore, and when she is, she's saying something that's just...off. Plus, she's got the Villa to run — they're apparently casting for another season as we speak.
  • Everyone's kinda phased out of this era — they're all older, have kids, split up, etc. There's just not that much keeping them all together in this way. Some could easily phase into the travesty that's The Valley, but ultimately VPR is just maybe past it's prime.

When will "Vanderpump Rules" season 12 air?

Image via Bravo

I would have guessed we'd get the next season by mid-winter 2025 given the turnaround time of the most recent season of Vanderpump Rules, but now I'm not sure. If I had to guess, I think we could get something by fall 2025, but who knows how long this hiatus can last. Or — like I said before — if the show even returns.
