My first encounter with Nice was love at first sight. I was in awe of the Azure Coast and the Mediterranean Sea. The intertwining of different shades of blue and green captivated my senses and set the stage for a culinary journey that would forever change the way I viewed salads. As I strolled through the vibrant streets of Nice, savoring the warm breeze and the aroma of freshly baked baguettes, I discovered a local masterpiece that perfectly mirrored the city's charm: the Niçoise salad.

Just as the Azure Coast weaves together various shades of blue and green, the Niçoise salad brings together a medley of flavors and textures to make your next meal more interesting. This dish really holds a special place in my heart, as it reminds me of the kind people I met there as well as the memorable moments shared during the summer season. I can't recommend enough going and visiting Nice and seeing the beauty of colors by yourself. In the meantime, don't skip on exploring the magic of the Niçoise salad in your own kitchen.

For the Salad:

  • 2 cups of mixed salad greens (lettuce, arugula, or your choice)
  • 1 cup of cherry tomatoes, halved
  • 1/2 cup of green beans, blanched and cut into bite-sized pieces
  • 1/2 cup of Niçoise olives (or other black olives)
  • 4 hard-boiled eggs, peeled and cut in half
  • 2 small potatoes, boiled and sliced
  • 1/4 cup of red onion, thinly sliced
  • 1 can of tuna in olive oil, drained and flaked
  • 4-6 anchovy fillets (optional, for garnish)

For the Dressing:

  • 3 tablespoons of extra-virgin olive oil
  • 1 tablespoon of red wine vinegar
  • 1 teaspoon of Dijon mustard
  • 1 clove of garlic, minced (optional)
  • Salt and freshly ground black pepper to taste

  1. Prepare the dressing. In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, minced garlic (if using), and a pinch of salt and black pepper. Set the dressing aside.
  2. Blanch the green beans. Bring a pot of water to a boil and add a pinch of salt. Drop in the green beans and blanch them for about 2-3 minutes until they become bright green and slightly tender. Immediately transfer them to a bowl of ice water to stop the cooking process. Drain and set aside.
  3. Assemble the salad. On a large serving platter, arrange the mixed salad greens as the base of the salad. Arrange the cherry tomatoes, green beans, Niçoise olives, hard-boiled eggs, sliced potatoes, and red onion on top of the greens. You can arrange them in sections for a visually appealing presentation.
  4. Add the tuna. Place the flaked tuna evenly over the salad.
  5. Drizzle with dressing. Drizzle the prepared dressing over the salad. You can use it sparingly or as desired. The dressing should enhance the flavors without drowning the salad.
  6. Garnish with anchovies. If you like anchovies, arrange them on top of the salad as a garnish.

We last left our Princeton royalty preparing for their freshman year of college, dreaming of happily-ever-after — or at least graduation — and that was that! But in this era of reboots, I've often wondered what happened to our OG tortured poets after the credits rolled. Luckily, I'm not the only one! Chad Michael Murray just tee'd up a sequel, and yes that's me you hear squealing right now. Here's everything we know about what's to come for everyone's fave modern fairytale!

Is there a part two to a Cinderella story?

There's Another Cinderella Story, starring Selena Gomez and Drew Seeley, but that's more so a part of a series of "Cinderella stories" rather than an actual sequel. So far, we haven't gotten a follow-up on our Princeton-bound faves.

Has "A Cinderella Story 2" been announced?

There's been no formal announcement yet, but that doesn't mean all hope is lost. During his press tour for Mother of the Bride, Chad Michael Murray told ETthat he's definitely interested in bringing Austin Ames back. He said that even his daughter told him, "You need to make another one of these, Daddy," after she watched A Cinderella Story for the first time.

His response to the idea? "Here you go, Hil. From me to you, let's do it!" — referring to Hilary Duff, of course! The timing couldn't be better either, given that Hilary just gave birth to her fourth child and could hypothetically be available to film in the coming months...just saying!

Again, there's no official information about this project yet, but with a main piece of the puzzle on board, we're one step closer to my own personal happily-ever-after — a real sequel to A Cinderella Story once and for all.

I'm happy to share that Nicholas Galitzine and Taylor Zakhar Perez are returning! I honestly don't think the Red, White & Royal Blue sequel would be the same if they weren't.

However, no other cast information has been released! Hopefully we'll see Uma Thurman and Clifton Collins, Jr. reprise their roles!
