How To Make Delicious and Buttery Pie Crust From Scratch

It's the perfect time of year for making pies. As we at Brit + Co know so well, learning how to make basic recipes sets the stage for a fun and delectable cooking experience. That's why we asked Most Hungry to share this insanely good pie crust recipe for a buttery, flakey pie base. We'll let them take it from here!

I'm not the most frequent or consistent baker, but there are times, and those times hit recently, that all I want to do is make and eat pie. All kinda pies. But every time I go to make a pie, I need to look at like five different dough recipes, get my ratios correct, make sure I have all the ingredients needed (I usually don’t) and then I can actually start getting to the pie making part. So I figured I might as well add a basic all-butter pie crust recipe to the site for my own reference and it might even be a help for you too.

Since I don’t make pies all that frequently, I never have lard or shortening around. I also just like an all butter pie crust. It’s simple, to the point, mo’ butter, mo’ better. Plus, I ALWAYS have butter. This recipe is nice since it’s scaled to make either two uncovered pies or one covered pie. The dough freezes really well, so any extra gets stashed away for another pie making day.

The starting point for this dough came from an older pastry book I found while used book shopping, The Complete Book of Pastry, Sweet & Savory by Bernard Clayton, Jr.. I love to browse around for old cookbooks, especially ones that have some majorly retro-styled food photography or illustrations and this book has both. Plus, it’s filled with some great recipes. The basic recipe calls for shortening, so I substituted that with butter and slightly reduced the water. And, full disclosure, I used salted butter in mine. I always have salted butter around, so that’s what I used. But that may be too salty for you, so use some unsalted butter and add in a good pinch of salt, maybe a teaspoon or so.

And, as you can see from the photos, this is really just a pie dough recipe. You can fill it with whatever you like, but depending on what that is, you may need to par or fully bake it before it’s filled. I’m planning on getting a recipe for the blueberry filled version I made with this crust up on the site very soon. If you need a fully baked crust before you fill your pie, I would start checking it around 25-30 mins and see how it’s browning. For a par baked crust aim for about 10-15 mins. And for a fruit filled version usually 50-60 mins will do the trick, you’ll want to make sure the filling is rapidly bubbling. Now onto the recipe…

All Butter Pie Crust

Ingredients:

  • 2 cups flour
  • 1/2 cup ice water
  • 3/4 cups (1.5 sticks) butter — very cold, cut into 1/2 inch cubes
  • ~ 1 tsp salt (only needed if you're using unsalted butter

Directions:

Combine flour and salt in a large bowl and mix well. Add in cold cubed butter and toss to coat in the flour. Press and rub butter cubes between your fingers till you get a shaggy, pebbly texture. You’re aiming to have the largest bits of butter no bigger than the size of a chic pea.

Add in your ice water and with a gentle kneading motion mix to get your dough combined. You want the dough to just hold together, but you don’t want it to be sticky or tacky. It’ll still be a bit dry and crumbly, but once you let it rest the flour will hydrate and you’ll have a nice workable dough.

Divide dough in half, shape into two rough disks about 1” thick and wrap tightly with plastic wrap, a plastic bag or parchment. Let it rest in the refrigerator for at least an hour. If you’re planning on freezing a portion of the dough for later, go ahead and stash it away in the freezer now.

When you’re ready to shape your crust, pull your dough from the fridge and let it sit at room temp for about 5 mins. Start rolling out the dough on a lightly floured surface. In addition I typically use parchment as a base to roll out the dough, really insures nothing sticks. You’re aiming for about 1/8” thick, or till you have it large enough to fit in your pie pan with about an inch overhang so you can get that nice crimped edge.

I like to use my pie dish as a template to trim off any extra dough. Roll that dough onto the rolling pin and transfer it into the pie dish. Fold the edges under and get it all crimped, waved or decorated however you like. You can go as simple as using a fork to crimp it or do an oversized wave like I did here. Before you bake, or fill it, I would recommend chilling your crust in the fridge for 10 – 15 mins before it goes in the oven.

Depending on how you plan to use the crust you can either par bake or fully bake it now. You will want to line the crust with parchment and add in some pie weights to keep it from puffing up (or my choice, some dried beans, cause I never have pie weights). Bake it at 350°F (180°C) for about 25-30 mins. You can take out the weights after about 10-15 minutes to make sure you get the pie fully cooked and golden brown.

If you’re planning on making a fruit pie, like I did with this crust, you don’t need to par bake it. I added in my blueberries (recipe for that coming very soon!) and baked it at 350°F (180°C) for 50-60 mins. Or until I saw that the fruit filling was boiling. The crust was nicely baked, golden and crisp on the bottom. No soggy, sad crusts here.

Your early 20s are supposed to be a time of freedom and discovery. You’re meant to explore the world, find your passion, deepen relationships and embrace transformative experiences – but not everyone gets that luxury. In fact, nearly 6 million women in the United States (including far too many young women) deal with PCOS (Polycystic Ovary Syndrome), a hormonal disorder with symptoms ranging from infertility to unbearably painful periods, says Endocrine Society.

If this is new information to you, let me break it down for you. In simple terms, PCOS is the most common hormonal disorder among women of reproductive age, but many women don't even know they have it. Unfortunately, too many women aren’t diagnosed with PCOS, despite having the condition, because many doctors still view the symptoms as “just something women have to deal with.” This subsequently causes some women to spend years advocating for themselves until any testing is done — which is absolutely ridiculous, BTW.

While the exact causes of the disorder are still unknown, there are some uncommon discrepancies that may correlate with the syndrome. For instance, Androgen excess (male hormone excess), is “seen in 60-80% of girls and women with PCOS, [and] is a key problem in the disorder and likely comes from ovaries in most women,” Endocrine Society states. Insulin resistance or elevated insulin levels, along with “abnormalities in how the brain or pituitary gland communicate with the ovaries may also lead to androgen overproduction. Other hormones from the ovary or fat tissue may also be involved.”

It’s believed that PCOS is generally inherited, but environmental factors (like low birth weight, rapid weight gain in infancy, early pubic hair and puberty development, childhood obesity, excess adult weight, unhealthy lifestyle, etc.) also play a role in the development of PCOS.

As we mentioned before, many women are only diagnosed after years of self-advocacy, and after consistently experiencing infrequent or painful periods, difficulty getting pregnant, ovarian cysts, abnormal weight gain, and hair loss (or excessive hair growth). You’d think this condition would be widely talked about, but truth be told more women have been diagnosed recently thanks to the advent of TikTok.

Through the app, hundreds of women recount their experiences with PCOS, some even documenting their journey pre and post diagnosis. This has led to more women seeking medical attention for traits that were once considered “not a big deal,” and having the information to move forward with their lives.

I interviewed five women in their early 20s on how this condition has affected their lives, and how they move forward with this newfound information.

Andie, 22: “I’ve dealt with painful and infrequent periods my whole life. Of course, doctors always told me it was ‘normal’ because my tests were ‘normal,’ but I always knew something wasn’t right. I actually first heard of PCOS through TikTok, and I was like, ‘this sounds a lot like me.’ Since then I've been super proactive in my health. To get diagnosed I had to go to several doctors which wasn’t great, but my new OBGYN took me seriously enough to do more intense testing. As I kinda expected, I was diagnosed with PCOS shortly after, but since not much is known about it I started doing a ton of research on my own. I take lots of supplements along with birth control, and have a pretty clean diet with regular exercise. My periods are a bit better now, but honestly it just feels good knowing that my gut was right all along.”

Cameron, 23: “I was diagnosed with PCOS when I was just shy of 19, which is pretty lucky considering most women don’t get diagnosed until later. My primary care doctor and OBGYN both believed me at face value, which made the process much easier than other women I have heard of. TikTok has helped me a lot to listen to my body and use more holistic methods to heal myself, most of which have worked, at least in my opinion. Honestly it could just be a placebo effect but I don’t care. I want to have kids one day, so it’s definitely a bit nerve wracking knowing I could have infertility. My doctors said I’m OK right now, but it’s still something extra I have to think about that my friends don’t.”

Lucy, 21: “I was literally just diagnosed two months ago, so I’m still learning a lot about it and how I can try to actually ‘cure’ myself. I mean – obviously I’d rather not have PCOS, but what am I going to do?! I’m currently taking fish oil, magnesium and probiotics, all of which I’ve heard good things about from other girls with PCOS. One of my best friends in college also has PCOS, so it’s nice to have someone else to talk to who ‘gets it.’ I would definitely recommend for other women who suffer from PCOS to find someone else with it to talk to, it’s been super helpful for me.”

Jenna, 20: “I’ve had periods of excessive weight gain and weight loss throughout my life, but I just thought it was because of exercise – I never thought it could be a sign of something bigger. I recently moved for school and started seeing a new doctor, because I kept gaining weight even though I ate a super clean diet and exercised a lot. He decided to send me for some bloodwork and other tests just to see if anything was wrong, and that’s how I found out I had PCOS – which was definitely surprising for me since I never had inconsistent periods. The diagnosis has allowed me to find new ways to workout so I can actually lose the weight I want to. It’s not as much as I’d like, but I’ve lost 15 lbs in the last four months!”

Lydia, 22: “Obviously, it’s never fun to cancel on your friends because you’ve got excruciating period pain, which is why I went to the doctor in the first place. After months of this stabbing-like pain the doctors finally diagnosed me with PCOS. It hasn’t changed a lot for me, if I’m being honest, but at the very least I am taking some medication so my periods aren’t nearly as painful anymore.”

It’s simultaneously wonderful and unfortunate that more young women are advocating for themselves. Wonderful that they find the power to advocate, but unfortunate that they have to. We hope these stories encourage you to take authority over your own health and wellbeing, and to be confident in your knowledge of yourself over someone else’s perception of you. Only you know how you feel, so advocate for that!

It’s a universal agreement that Erewhon smoothies are expensive. The specialty grocery store sells their cold drinks for upwards of $24 — that is, if you add ice cream to an already 20-something dollar beverage. As a freelance writer with a Gen Z’s bank account, paying double digits for a smoothie isn’t exactly feasible. With Erewhon smoothies being completely out of my budget, and me loving a post-workout smoothie boost, I learned that it is in fact possible to make your own version at home to get more bang for your buck!

The most outstanding fact about homemade smoothies is that they can contain anything you want them to (and more often than not, taste just as good as the ones you buy from a shop). Plus, a smoothie can cater to your dietary preferences. I opted for two recipes — one sweet and one savory — because I, like my music taste, have different cravings and moods for every smoothie-sipping occasion. I went through some trials and tribulations to form these recipes, and please note they are inspired by the Erewhon smoothie menu, not *exact* copycats. Let’s DIY our next morning beverage, shall we?

1. Sunny Summer Smoothie

The Sunny Summer Smoothie is for those mornings when you're craving something sweet. Personally, I enjoy flaxseed meal more than whole seeds, because my stomach digests them better. Flaxseed meal is also a much simpler option when you are using a blender versus a food processor because it's already ground up (and who really wants to drink whole seeds, even if they are small!). Per Healthline, the additive is high in nutrients, omega-3 fatty acids, rich in fiber, and more.

Ingredients for the Sunny Summer Smoothie:

  • 1 tablespoon flaxseed meal (can substitute with chia seeds)
  • 1 cup Planet Oat unsweetened oat milk (or whichever oat milk you prefer)
  • 1 ½ teaspoons Planted Seeds purple sea moss
  • ½ cup strawberries (cut in quarters or halves)
  • ½ cup frozen peaches
  • Honey (however much you prefer)

Once you pour in the flaxseed meal, I would recommend throwing in the strawberries and purple sea moss next. I’ve found that placing those ingredients into the blender first will allow the blade to cut through the frozen foods more easily. Purple sea moss is actually used in Hailey Bieber’s popular Strawberry Glaze smoothie sold at Erewhon, and is said to contain powerful antioxidants that lower inflammation.

As a pro tip, purple sea moss smells a bit pungent, and well, like the salty ocean sea. That’s why even though the serving size is one tablespoon, I opted for half of that to reduce the taste from overpowering the smoothie. Add in the frozen peaches, the oat milk, however much honey your heart desires, and blend everything until it’s a thick smoothie consistency. If your preference is a thinner smoothie, throw in less fruit than the recipe calls for, and vice versa for a thicker smoothie.

2. Cloudy Summer Smoothie

This one’s for the savory queens. The Cloudy Summer Smoothie is still fruit-based, but alternatively uses a banana and frozen wild blueberries instead of strawberries and peaches. I would imagine that you could switch those two ingredients out for spinach or another vegetable of your choice as well – you may just have to add in a sweetener like honey or extra lemon juice. The recipe here has similar directions to the Sunny Summer Smoothie, as I recommend loading your room temperature ingredients first.

Ingredients for the Cloudy Summer Smoothie:

  • ¼ cup Trader Joe’s 50% Less Salt Roasted & Salted Whole Cashews (or other cashews you prefer)
  • 1 cup frozen wild blueberries
  • 1 banana
  • ¼ cup freshly squeezed lemon juice
  • 1 cup Planet Oat unsweetened oat milk (or whichever oat milk you prefer)
  • 1 tablespoon Planted Seeds golden sea moss

I actually prefer golden sea moss to purple sea moss, due to its much milder taste and odor. Although there aren’t heavy studies performed on the effects of golden sea moss, it is reported to support gut health, build muscle, and is heart-healthy. Next, pour in the frozen blueberries, lemon juice, and unsweetened oat milk. Blend until you reach your desired consistency.

Writer’s note: Many common ingredients in Erewhon smoothies include: coconut water, coconut cream, raw almond milk, peanut butter and vanilla collagen. I either don’t enjoy some of those taste profiles, or don’t incorporate those products into my daily diet, but you can *absolutely* customize your smoothie to cater more towards those flavors.
