Swap Out These Ingredients to Make a Green Bean Casserole for Every Dietary Need

Traditional holiday casseroles, full of gluten, eggs, and dairy, are off-limits when you have dietary restrictions (enter extremely sad face here). If your family or friend group includes someone who is vegetarian, gluten-free, and/or picky (and thinks veggies taste straight-up like earth), then you’ll need to adapt a classic recipe so no one is left out of the feast. Follow along to learn how to make a green bean casserole from scratch, starting with the mushroom sauce, the beans, and the all-important onion topping — all feature a standard version plus simple substitutions for a vegan or gluten-free option!

Mushroom Sauce

(Makes sauce for 1 casserole)

Ingredients:

  • 2 tablespoons of butter (or coconut oil)
  • 1 onion, chopped
  • 4 cloves of garlic, minced
  • 12 ounces mushrooms
  • 2 tablespoons cornstarch (leave out for GF/vegan version)
  • 1/2 cup chicken stock (or vegetable stock)
  • 1 cup milk (or 1 1/2 cups almond milk)
  • 1/2 cup Parmesan cheese (or 1 head of cauliflower, chopped)
  • 1/2 teaspoon of salt
  • 1/2 teaspoon pepper

Directions (for Traditional Sauce):

1. Heat butter in a large sauté pan over medium-high heat until melted. Add onions and sauté for 3-5 minutes until they are soft and cooked. Add in garlic and mushrooms. Sauté for an additional 1-2 minutes until fragrant, stirring occasionally.

2. Sprinkle with cornstarch, and stir to combine. Slowly add chicken broth, stirring until smooth. Stir in milk and let cook for an additional minute until thickened. Add in Parmesan cheese, salt, and pepper, and stir until the cheese is melted. Reduce heat to low until the sauce is ready to be tossed with the green beans.

Directions (for Gluten-Free/Vegan Sauce):

1. In a large pan, add cauliflower, almond milk, salt and pepper. Cook until the cauliflower is soft.

2. Once cooked, add the mixture into a blender (or food processor) and blend until very smooth and creamy.

3. In the same large pan, heat up coconut oil and sauté onions and garlic. Once the onions are transparent, add in mushrooms; cook for another 5 minutes.

4. Once the mushrooms are cooked, add the cauliflower soup back into the pan. Reduce heat to low until the sauce is ready to be tossed with the green beans.

Green Beans

(Makes enough for 2 casseroles)

Ingredients:

  • 3 pounds green beans

Directions:

1. Bring a large stockpot of water to a boil.

2. Meanwhile, chop off the ends of each green bean. Line them up or use kitchen scissors to make the process go faster.

3. To the pot of boiling water, add in the chopped green beans and boil for 3-5 minutes.

4. Drain the green beans in a fine mesh sieve, then run cold water over the beans to halt the cooking.

5. Transfer them to a separate bowl. Let sit while you prepare the onion topping.

Fried Onion Topping

(Makes enough for 1 casserole)

Ingredients:

  • 1 onion, sliced toward the grain
  • 1 1/2 cups milk (or 1 1/2 cups almond milk)
  • 1 1/2 cups flour (or 1 1/2 cups coconut flour)
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • vegetable oil, for frying

Directions (for Standard Version):

2. In a medium-sized bowl, add flour, salt, and paprika. Stir to combine.

3. Take a handful of onions and toss them in the flour to coat.

  • 1 batch cooked green beans

1. Toss the cooked green beans in the mushroom sauce (can be directly in the pan), then pour into a casserole dish.

2. Top it off with your fried onions.

3. Bake in an oven at 375°F for 15 minutes or until heated through.

Directions (for GF/Vegan Version):

Green bean casserole that will make everyone happy :) Both casseroles are pretty good! The mushroom sauces are almost identical in taste. However, be aware that the coconut flour fried onion does have a different flavor and texture that may take getting used to.

It’s a universal agreement that Erewhon smoothies are expensive. The specialty grocery store sells their cold drinks for upwards of $24 — that is, if you add ice cream to an already 20-something dollar beverage. As a freelance writer with a Gen Z’s bank account, paying double digits for a smoothie isn’t exactly feasible. With Erewhon smoothies being completely out of my budget, and me loving a post-workout smoothie boost, I learned that it is in fact possible to make your own version at home to get more bang for your buck!

The most outstanding fact about homemade smoothies is that they can contain anything you want them to (and more often than not, taste just as good as the ones you buy from a shop). Plus, a smoothie can cater to your dietary preferences. I opted for two recipes — one sweet and one savory — because I, like my music taste, have different cravings and moods for every smoothie-sipping occasion. I went through some trials and tribulations to form these recipes, and please note they are inspired by the Erewhon smoothie menu, not *exact* copycats. Let’s DIY our next morning beverage, shall we?

1. Sunny Summer Smoothie

The Sunny Summer Smoothie is for those mornings when you're craving something sweet. Personally, I enjoy flaxseed meal more than whole seeds, because my stomach digests them better. Flaxseed meal is also a much simpler option when you are using a blender versus a food processor because it's already ground up (and who really wants to drink whole seeds, even if they are small!). Per Healthline, the additive is high in nutrients, omega-3 fatty acids, rich in fiber, and more.

Ingredients for the Sunny Summer Smoothie:

  • 1 tablespoon flaxseed meal (can substitute with chia seeds)
  • 1 cup Planet Oat unsweetened oat milk (or whichever oat milk you prefer)
  • 1 ½ teaspoons Planted Seeds purple sea moss
  • ½ cup strawberries (cut in quarters or halves)
  • ½ cup frozen peaches
  • Honey (however much you prefer)

Once you pour in the flaxseed meal, I would recommend throwing in the strawberries and purple sea moss next. I’ve found that placing those ingredients into the blender first will allow the blade to cut through the frozen foods more easily. Purple sea moss is actually used in Hailey Bieber’s popular Strawberry Glaze smoothie sold at Erewhon, and is said to contain powerful antioxidants that lower inflammation.

As a pro tip, purple sea moss smells a bit pungent, and well, like the salty ocean sea. That’s why even though the serving size is one tablespoon, I opted for half of that to reduce the taste from overpowering the smoothie. Add in the frozen peaches, the oat milk, however much honey your heart desires, and blend everything until it’s a thick smoothie consistency. If your preference is a thinner smoothie, throw in less fruit than the recipe calls for, and vice versa for a thicker smoothie.

2. Cloudy Summer Smoothie

This one’s for the savory queens. The Cloudy Summer Smoothie is still fruit-based, but alternatively uses a banana and frozen wild blueberries instead of strawberries and peaches. I would imagine that you could switch those two ingredients out for spinach or another vegetable of your choice as well – you may just have to add in a sweetener like honey or extra lemon juice. The recipe here has similar directions to the Sunny Summer Smoothie, as I recommend loading your room temperature ingredients first.

Ingredients for the Cloudy Summer Smoothie:

  • ¼ cup Trader Joe’s 50% Less Salt Roasted & Salted Whole Cashews (or other cashews you prefer)
  • 1 cup frozen wild blueberries
  • 1 banana
  • ¼ cup freshly squeezed lemon juice
  • 1 cup Planet Oat unsweetened oat milk (or whichever oat milk you prefer)
  • 1 tablespoon Planted Seeds golden sea moss

I actually prefer golden sea moss to purple sea moss, due to its much milder taste and odor. Although there aren’t heavy studies performed on the effects of golden sea moss, it is reported to support gut health, build muscle, and is heart-healthy. Next, pour in the frozen blueberries, lemon juice, and unsweetened oat milk. Blend until you reach your desired consistency.

Writer’s note: Many common ingredients in Erewhon smoothies include: coconut water, coconut cream, raw almond milk, peanut butter and vanilla collagen. I either don’t enjoy some of those taste profiles, or don’t incorporate those products into my daily diet, but you can *absolutely* customize your smoothie to cater more towards those flavors.

“After many months, today we have ultimately decided to end our engagement,” they wrote in a joint Instagram statement on May 8. “We have tried to work privately on our relationship which has been incredibly challenging in the public eye...We are deeply hurting and can only ask that there be no hate. When Miley Cyrus debuted "Flowers," it felt like the ultimate empowering song of the year. Lyrics like "Yeah, I can love me better than you can" make it clear she's leaving her past love behind and embracing her relationship with herself. While we know paradise didn't last for the former couple, adding to a long list of celebrity breakups, some people were convinced their divorce was the result of Liam's alleged fling with none other than actress Jennifer LawrenceGASP! However, after years of speculation, JLaw is finally sharing her side of the story.

Why were Miley's fans convinced Liam had a fling with Jennifer Lawrence?

When Jennifer appeared on an episode of Watch What Happens Live with Andy Cohen in 2015, she shared that she and Liam had an off-screen kiss while filming one of the Hunger Games movies. This led fans to develop theories that this happened while Liam and Miley were still together.

Once Miley released the music video for "Flowers," fans believed the stunning gold dress Miley wore towards the beginning was her way of hinting at the alleged fling. Jennifer *did* wear a gold dress to the premiere of Hunger Games in 2012, so we can see how fans would make this connection.

What does Jennifer have to say about the Liam Hemsworth rumors?

But per E! News, Jennifer appeared on Watch What Happens Live with Andy Cohen yesterday to answer Andy's burning question about whether "Flowers" was referencing the alleged fling. She told him, "Not true, total rumor." But, she did mention the kiss again. In her own words, she said, "We all know Liam and I, like, kissed one time. It was years after they broke up. So I just assume [the music video] was a coincidence."

Did Liam and Miley ever address cheating allegations?

While Liam has kept quiet about the rumors, Miley was a little more vocal about allegations that she cheated. She didn't dive into too many details, but wrote a statement via Twitterin 2019 that said, "I can admit to a lot of things but I refuse to admit that my marriage ended because of cheating."

Rumors can be juicy — we'd be lying if we said we didn't like reading about them — but this doesn't always mean they're true. Only Miley, Liam, and Jennifer knows what truly happened (if anything happened at all), and that's what ultimately matters.
