This Plant-Based Egg Actually Tastes Totally Authentic

Welcome to our new food series called Eat It Up, where we share the kitchen gadgets and foods that we can’t cook without.

JUST, the makers of dairy- and egg-free cookie dough, mayo, and sauces, has spent the last few years attempting the seemingly impossible: to formulate a plant-based egg that looks like, cooks up like, and tastes like scrambled eggs. Working with food scientists, researchers, and Michelin-starred chefs, the company tested and tweaked their mung-bean-based egg for years before finally releasing it to the public last month. We had a chance to try JUST Egg at the Brit + Co HQ to see if it really could fool our tastebuds.

The chef cranked up the skillet, opened up the 12-ounce container ($8-$9), and poured in the pale yellow liquid. It miraculously congealed before our eyes, just like chicken eggs. He used the same technique you normally would to scramble eggs, scraping up the fluff from the bottom of the pan with a spatula until no liquid remained. He divved it up to roughly 30 tasters, a mix of vegetarians and omnivores, and we took a bite. Amazingly, we were all fooled. This product tastes exactly like a fresh scrambled egg, both in texture and flavor. There’s no bean-ish taste or sandiness. Nutrition-wise, JUST Egg has slightly less protein (5 grams) than a chicken egg (6 grams), but it’s less caloric (45 versus 70) and contains half the total fat (2.5 grams versus 5).

In the coming weeks, JUST Egg will be available for purchase on JET.com and in Wegman’s, Fresh Thyme, Gelson’s Market, and more grocers. But if you’re dying for a taste now, you can find it at Veggie Grill, a plant-based fast-casual chain restaurant. JUST partnered with Veggie Grill to create an All-Day Breakfast Burrito ($11), which we also had a chance to try.

JUST Egg, combined with Veggie Grill’s “chorizo,” home fries, black beans, cheddar “cheese,” and fire-roasted salsa, is wrapped up inside a toasted flour tortilla for a breakfast burrito that, while satisfying, won’t fill you with regret afterward. Dare we admit, many of us ended up eating two!

Yep, we are big fans of this plant-based egg and can’t wait to experiment with it in other skillet recipes. JUST says the JUST Egg can even work in fried rice, pancakes, crepes, French toast, and more. Talk about nom.

You're probably thinking: "WTF am I supposed to with a 'zoodle'?" But fear not — we're here to help! Zoodles (AKA zucchini noodles) are *actually* quite easy to make. You can sauté them on the stovetop, boil them like traditional pasta or simmering them straight in some sauce. In fact, cooking them is so easy that we have a hunch that these zoodle recipes will be your new go-to for anytime you want to some extra greens.

Prepare your zoodles fresh with these tips, or pick some prepackaged ones up from your local grocery store and skip straight to the recipes!

How To Prepare Zoodles

Cut Your Zucchini Noodles The Right Way

To make zoodles, cut both ends off of the zucchini. Slice the zucchini into two halves. From there, use a tool like the Kitchenaid spiralizer attachment that screws onto your stand mixer or a free-standing tool like the one from OXO, or an Inspiralizer to unspool fine or extra fine zucchini ribbons from the core of the zucchini.

In a pinch, you could try using a vegetable peeler to peel long planks off the zucchini and then slice them into noodles. Or, cut the planks using a chef's knife and then further slice them into matchsticks. Once you've processed the zucchini into zoodles, store them in the refrigerator where they taste best within three days.

While zoodles can be eaten raw and dressed up in pesto or another salad dressing, if you want to cook them, these are the three methods to try.

How To Cook Sautéed Zoodles

Heat a skillet over medium heat. Add two teaspoons of oil (olive or coconut) or a pat of unsalted butter. Toss in the zoodles (spiralized from one zucchini), salt to taste, and sauté for several minutes, turning with tongs until the color of the zoodles deepens and they become soft.

Serving Suggestion: After oil is heated, stir in thinly sliced garlic or minced fresh ginger to sizzle and scent the oil. This would be the time to also add a dash of spice like a curry powder, if you like. Once zoodles are cooked, garnish with a scattering of toasted coconut, shredded fresh cilantro and/or mint leaves, and chopped scallions. Pair it with fish.

Is there a part two to a Cinderella story?

There's Another Cinderella Story, starring Selena Gomez and Drew Seeley, but that's more so a part of a series of "Cinderella stories" rather than an actual sequel. So far, we haven't gotten a follow-up on our Princeton-bound faves.

Has "A Cinderella Story 2" been announced?

There's been no formal announcement yet, but that doesn't mean all hope is lost. During his press tour for Mother of the Bride, Chad Michael Murray told ETthat he's definitely interested in bringing Austin Ames back. He said that even his daughter told him, "You need to make another one of these, Daddy," after she watched A Cinderella Story for the first time.

His response to the idea? "Here you go, Hil. From me to you, let's do it!" — referring to Hilary Duff, of course! The timing couldn't be better either, given that Hilary just gave birth to her fourth child and could hypothetically be available to film in the coming months...just saying!

Again, there's no official information about this project yet, but with a main piece of the puzzle on board, we're one step closer to my own personal happily-ever-after — a real sequel to A Cinderella Story once and for all.

Butter, Ghee, Lard, or Schmaltz

You can eat almost any fat on a vegan diet, such as extra virgin olive oil, coconut oil, and avocado oil. One gray area is palm oil. While palm oil doesn’t come directly from an animal source, many vegans are concerned about how areas are deforested in order to plant palm oil plantations, leading to habitat loss for millions of animals. The problem is especially affecting fragile orangutan populations.

Foods You CAN Eat On A Vegan Diet

Eat all the vegetables you want, vegan babes! Beans, nuts, and peas are especially rich in protein, but you may be surprised to learn that even the humble white potato contains 3 to 7 grams of protein, depending on its size! Try to eat a rainbow of veggies every day to make sure you’re getting all the nutrients you need.

I'm happy to share that Nicholas Galitzine and Taylor Zakhar Perez are returning! I honestly don't think the Red, White & Royal Blue sequel would be the same if they weren't.

However, no other cast information has been released! Hopefully we'll see Uma Thurman and Clifton Collins, Jr. reprise their roles!
