America has made a range of global foods their own, but there’s no other cuisine *so* embedded in our culture than barbecue. Over time, slow-roasted meat became a vehicle for community – think the classic cookout, Fourth of July backyard party, or your upcoming Memorial Day grilling fest – but with each region adopting (and priding in) its own variation of barbecue, there’s room to argue which state’s doing it the “right” way.

The History of Barbecue

To understand more modern iterations of barbecue, we have to look back to its roots. The first mention of BBQ in history came from Spanish explorer, Gonzalo Fernández De Oviedo y Valdés, in 1526, as he often encountered indigenous Caribbeans preparing meat over a wood fire. At the time, it was common for Caribbeans, Africans, and indigenous Americans to make barbecue (commonly known to them as barbacoa) this way. It wasn’t long before explorers and colonists took to this early form of barbecue and made it their own, particularly those living in the South.

Southerners were *super* proud of their barbecue, especially since it centered around pork. Pigs could be converted for consumption faster than cattle, giving the swines a higher economic value than their cow counterparts. Southerners were quick to find strength and patriotism in this advantage, fueling the growth of barbecue throughout the region even more. BBQ was tasty enough for any occasion, from church gatherings, political rallies, birthday parties, and even funerals – plus, the cuisine was one of the first to “bind together” a segregated 19th-century society.

By the time the Cold War came around, BBQ was booming. Despite its Caribbean and African background, barbecue was viewed as a uniquely American cuisine and activity, specifically weaved into homeowners and consumers. It was the thing that brought Americans together – with informality and accessibility.

The Types of Barbecue

But the basics of barbecue remain. The #1 distinguishing feature of BBQ is its smoky taste, influenced directly by being slowly grilled or roasted over a wood-burning fire. The differences throughout different regions in the U.S. (and even around the world) entail the types of meats used, as well as the types of wood, whether the meat gets a dry rub or not, how long it’s smoked for, the construction of the BBQ sauce used (or no sauce at all), and the method of serving.

If you’ve ever wondered what sets apart North Carolina BBQ from Texas BBQ, we’re here to make the blurred lines clearer. Check out the different types of regional barbecue throughout the U.S., and how they set themselves apart below:

South Carolina Barbecue

The Carolinas are a region of tension, as SC-ers and NC natives claim their own distinctive styles of barbecue. The main difference between the two is that North Carolina uses the whole pig, while South Carolina BBQ cooks tend to focus on only the shoulder and ribs.

More contentious conversations surround the sauce. South Carolina barbecue uses a more mustardy sauce for the tanginess, though different recipes circulate the state (see western SC’s tomato-heavy sauces).

North Carolina Barbecue

North Carolina BBQ can be broken down into two styles: Lexington-style and Eastern NC-style.

Lexington-style barbecue is biased towards using only pork shoulder, while whole hogs are more common in Eastern NC-style. Lexington-style fanatics often enjoy a thin BBQ sauce that’s more dippable, crafted from vinegar, tomatoes, and red pepper flakes.

Eastern NC-style sauces are thicker, and exclude tomatoes. Another big difference between the two lies in the sides: coleslaw is popular in both localities, but Lexington-style BBQ coleslaw is known as “red slaw” since the traditional mayo is replaced with their unique BBQ sauce.

Despite their differences, both Carolinas, South and North, claim more tasty side dishes like hushpuppies, baked beans, mac and cheese, and French fries to partner with BBQ’d meats. 🍖

Memphis-style Barbecue

Memphis-style barbecue is mostly comprised of slow-roasted pork, but a lot of BBQ joints will also serve beef and chicken dishes. Memphians also love a classic BBQ sandwich – with *just* meat, sauce, and coleslaw piled on.

One unique facet of this regional BBQ is that the meats are available in “dry” or “wet” form – dry meat gets a spice rub before cooking (and is enjoyed without sauce, because it’s just that flavorful), and wet BBQ meat entails brushing the meat with BBQ sauce before, during, and after cooking for flavor.

Hawaiian Barbecue

Hawaiian barbecue utilizes the same meats as most other U.S. regions – from the likes of pork ribs, brisket, and pulled pork, and even fish – but its most distinctive trait comes from the sauce. Sweeter tastes envelop Hawaii-style BBQ, with most chefs preparing and serving the meat with shoyu. Shoyu is crafted from sugar, garlic, soy sauce, and ginger, and oftentimes partners up with tropical flavor inspirations like passionfruit or pineapple.

There’s a lot of tradition behind Hawaiian BBQ. You've likely heard of luaus, which are celebratory gatherings that include a slow pit-roasted whole pig wrapped in banana leaves – left to roast for a half day for maximum tenderness and depth in flavor.

Kansas City-style Barbecue

KC-style barbecue is characterized by a wide variety of meats. In any pit, you can choose from beef, pork, fish, chicken, and even lamb. The preparation work that goes into KC BBQ is integral in setting it apart from others – meat always gets a seasoned dry rub before barbecuing, including the popular ‘burnt ends’ selections (random cuts).

KC barbecue meat is served most regularly with a side of French fries, and paired with thick, sweet tomato-based sauces infused with brown sugar and molasses.

Texas Barbecue

Just like the state is massive, Texas BBQ is huge, and different parts of the Lone Star State claim different BBQ techniques and platings. You’ll find a range of meats in every Texas barbecue: beef, pork, brisket, and sausage are the most popular. To examine TX BBQ, you have to break it down further by Central Texas, East Texas, West Texas, and South Texas.

  • Central TX BBQ has a strong influence from German and Czech settlers that arrived in the 19th century. Central Texas BBQ meats usually get a dry rub of *only* salt and pepper, then is cooked very slowly and indirectly over hard woods that make things extra smoky-tasting. BBQ sauce is often seen as offensive in this region. 😯
  • East TX BBQ meats are cooked until very tender. East Texans like it to be falling off the bone while enjoying BBQ. Hickory-smoked meats are the most popular option, and whether they’re eaten alone or a sandwich, this region is super proud of their BBQ.
  • West TX barbecue meats are often cooked over mesquite wood for more smokiness. Most of the serving suggestions mirror that of East and South Texas.
  • South TX barbecue meats get slathered in *heaps* of molasses-infused sauce to keep things ultra-moist. Barbacoa (meat prepared and smoked in the ground) is also very popular in Southern areas near the Mexican border.

Trader Joe's Pepita Salsa

Pepitas (shelled pumpkin seeds) are added to this salsa. They give it an almost creamy texture, which, along with sweet bell peppers and smoky chipotle powder, makes this sauce one of our go-to condiments for tacos, burritos, and more.

Trader Joe's Green Dragon Sauce

If you're bored with Sriracha, reach for this green sauce when garnishing anything from fried eggs to stir-fry. It's made with green jalapeños, cilantro, and tomatillos, so you still get the spice, but it's also tangier, less sweet, and has a grassier flavor than the red stuff. It's quite amazing!

Trader Joe's Organic Kansas City-Style BBQ Sauce

Some Kansas City-style barbecue sauces border on cloyingly sweet, but not so with this Trader Joe's marinade. It's got the right balance of sugar, molasses, and tangy vinegar to enhance – not overpower – your smoked meats.

Trader Joe's Thai Peanut Satay Sauce

This complex, sweet Trader Joe's sauce makes for the perfect marinade for chicken if you want a hearty meal with international flair. It's like they bottled up Southeast Asia's adoration for street food, and made it accessible among the shelves at your nearest TJ's. This pick would also make for an excellent base for noodle dishes or curry.

Trader Joe's Korean Gochujang Sauce

Trader Joe's Chimichurri Sauce

TJ's website describes their chimichurri as "savory, herbaceous, refreshing, and richly aromatic," though we'd edit it and add "heavenly" to the list. This oily, bright blend of parsley, cilantro, garlic, dried cumin, crushed red pepper, and vinegar will bring forth tastes to your seafood, burgers, pastas, and potatoes like you've never had before.

Trader Joe's Thai Sweet Ginger Sauce

This gingery sauce is ahh-mazing when you dip fresh rice paper spring rolls in it! Each pour of this tall bottle gives off a tangy-yet-spicy effect. We haven't tried it as a Trader Joe's marinade yet, though we think it'd taste immaculate on beef for making any kind of stir fry.

Trader Joe's Magnifisauce!

It's magnificent! It's Magnifisauce! This secret sauce dupe (it's really giving In-N-Out animal style) combines a little bit of everything – mustard, mayo, ketchup, relish – to create the perfect condiment for burgers, sammies, and homemade fries.

Trader Joe's Crunchy Chili Onion

Chili oil FTW! The crunch in this Crunchy Chili Onion sauce is from tons of little garlic bits that provide both texture and flavor. We love making our scrambled eggs with a little bit of this in the pan (instead of regular oil), drizzling it on some streaming-hot orange chicken, or even drizzling some on ice cream for an interesting dessert!

She says, "Colorful fruits and vegetables are rich in antioxidants, and healthy fats like butter or plant oils help improve skin immunity and protect against environmental UV damage. Liquid collagen is popular as a skin-rejuvenating food or supplement, but when you do that, make sure you are making the smoothie with collagen peptides. The collagen is broken into small pieces called peptides which absorb much better and signal your body to regenerate collagen." So clearly, collagen is vital if you want to have glowy skin.

Elina also says, "It is a scientifically proven fact that people who eat very high levels of antioxidant-rich diets with fruits and vegetables and anthocyanosides — they can stay in the sun without any protection much longer because their body can protect them naturally from UV damage." Her three rules for healthy skin?

  1. No processed foods.
  2. Eat tons of antioxidants.
  3. Use an SPF — preferably one that is a mineral Zinc Oxide based — alongside protective hats in the sun.

Nutritionist and wellness expert Jessica Green says, "Silica rich foods are a great place to start — these include celery, asparagus, banana, cucumber, green beans to name my favorite. Skin elasticity can easily be improved through these foods and can make you look 10 years younger! I definitely notice a significant difference in my skin when I regularly eat collagen-rich foods than when I don't!

Avocado and Olive Oil

Avocados and olive oil are really going to up your skin game, and giving you that gorgeous glow for summer we're really looking for. Kristen White, RDN, CLT, says, "Clean fats like olive oil, avocados, coconut oil, and tallow in our diet help replenish needed vitamins and fatty acids to help skin look its vibrant best." That's exactly what we want!

In regards to olive oil, it really is the must-have when it comes to achieving a glowy complexion. Jenny Jiles, a holistic nutritionist says, "Olive oil is the GOAT. We know why all of those women in the Mediterranean look so vibrant and sexy as they age, because olive oil is such a staple in their diet. Don’t be afraid of this healthy fat, it’s filled with antioxidants and omega 3 fatty acids which help protect your skin from free radicals to reduce those fine lines and help you glow from the inside out. Add olive oil to any and all of your meals, savory or sweet (yes, trust me on that)." So I guess the key to looking like an Italian goddess this summer (and always) is olive oil!

Chia, Flax Seeds, and Sunflower Seeds

Many seeds and grains are going to be crucial in giving you radiant skin. Plus, they have so many healing properties that can help reduce redness and inflammation in the skin. Christine Glaser, CEO of DIY Skincare Business, says, "Chia and flax seeds are also helpful for all skin types and can aid in toxin removal." And sunflower seeds actually have antibacterial properties too that help get rid of toxins in order to keep your skin looking fresh and clear; thus the radiant skin we're trying to achieve here!

Red Bell Peppers, Carrot, and Tomatoes

You always want to have a variety of colors when eating fruits and vegetables because this will help you get the most out of your diet and achieve maximum radiance. A health expert and dietician, Chrissy Arsenault of Kori, says, "Eat lots of fruits and veggies. Choose 2-3 colors of fruits and veggies at every meal – fruits and veggies are rich in antioxidants (vitamins A, C, E) that protect your skin from damage." And tomatoes, carrots, and bell peppers are very rich in color so they will give you so many great nutritional benefits that will assist in giving you a perfect inside-out glow!

What foods should I avoid for my skin?

If you want radiant, clear, acne-free skin then you definitely want to avoid foods high in dairy or sugar. Jessica Green says, "When it comes to foods to avoid for radiant skin, sugar and dairy float to the top. Both are inflammatory. Sugar causes glycation which damages the skin's elasticity. Dairy (cow dairy specifically) tends to be one of the most common foods that cause reactions for people including acne and puffiness." I'm definitely taking note to try and cut our these foods now!

If there are two things you can count on, it's that I'm always thinking about Gilmore Girls and I'm always listening to Taylor Swift. As soon as I pressed play on The Tortured Poets Department, I could tell this album would resonate with so many experiences I had a child and a teenager. I've always been imaginative (and, admittedly, a bit spacey), and to this day, I never leave home without a book.

I've built thousands of imaginary worlds and crafted endless stories, but have always had difficulty keeping up with real-world relationships. So, needless to say, when I listened to Taylor Swift's new album and heard "I Hate It Here" and "The Bolter," I felt seen. I also realized these two songs would speak to Rory Gilmore in the same way!

Rory Gilmore Would Love "I Hate It Here" By Taylor Swift...

"I Hate It Here" totally showcases Taylor Swift's ability to express raw emotions, and it also perfectly captures Rory Gilmore's struggles during certain periods of her life. The lyrics reflect frustration and dissatisfaction we can all feel sometimes (I know I've definitely felt them), and while Rory and Taylor's dreams in and of themselves are different, they both want to leave their small towns to achieve them. Whether it's feeling overwhelmed by expectations or facing setbacks in her career in Gilmore Girls season 5, Rory has moments throughout the series where she feels a bit trapped.

But even more than the physical meaning of the song is the imaginary one. Taylor sings about creating worlds in her mind and diving into books to escape the mundane. Rory reads more than any fictional character I've ever seen before because she also craves that escapism! The lyrics of "I Hate It Here" resonate with Rory when she wants to live different lives, and it encapsulates the moments when she struggles or questions her decisions — relatable!

...And She'd Feel Attacked By "The Bolter" By Taylor Swift

TBH, I'm half convinced "The Bolter" is referencing Amy March (after all, Amy has been "reviled" by readers for hundreds of years, and she "almost drowned...in frigid water" like Taylor sings), which is just another literary reference Rory would pick up on.

In "The Bolter," Taylor Swift captures the essence of a woman constantly seeking adventure and change, just like Rory Gilmore, and it's all about the idea of a restless spirit. While the lyrics can be taken from a hypothetical standpoint (feeling trapped by relationships or other people's expectations), we can also talk about it literally considering Rory physically runs away from Jess.

Rory might desire love, but the idea of it also scares her — two facts that don't cancel each other out! Just like Taylor Swift, I think Rory's thrilled by the idea of escape simply because she's so risk averse in other areas of her life. Once again, I say, relatable!!

"The Bolter" and "I Hate It Here" are both incredibly engaging songs because they highlight just how complex we are as humans — both in the ways we relate to ourselves and other people. And they're just two Taylor Swift songs Rory would definitely add to her playlist.
