These Pineapple Al Pastor Tacos Are The Perfect Tailgate Meal

While football is (obviously) a foundational aspect of football season, there's something that I love much more than actually watching the games: snacks. When tailgating finally comes back, it means that the weekends are going to be full of time with friends, sipping on cocktails, and grabbing all kinds of finger foods. These grilled chicken al pastor tacos have both fruits and veggies, and are so fun to make that they'll become your go-to tailgate meal. Although, who are we kidding, everyone around you will want a bite too!

Grilled Chicken Al Pastor Tacos With No Waste Pineapple Salsa

Ingredients

Chicken Al Pastor

  • 3 lbs. boneless chicken breasts or thighs (like fromDo Good Chicken)
  • 2 cups pineapple, diced
  • 2 plum tomatoes, cored and quartered
  • 1⁄4 small yellow onion
  • 3 cloves garlic
  • 2 tablespoons fresh lime juice
  • 2 1-inch cubes pineapple fresh
  • 1-2 chipotle peppers in adobo sauce
  • 1⁄4 cup flavorless oil, such as avocado
  • 1 cup pineapple, cut into small chunks
  • 2 tablespoons sugar
  • To Serve, tortillas, caramelized pineapple, cotija cheese, fresh jalapeños, no waste salsa (recipe below), sour cream, guac, cilantro, and extra lime juice.

No Waste Pineapple Salsa

  • 2 cups pineapple, diced
  • 1/4 cup chopped yellow onion
  • 1/4 cup chopped cilantro
  • Juice of 1 large lime
  • 1 teaspoon ground cumin
  • Salt, to taste

Directions

  1. Combine tomatoes, white onion, garlic cloves, lime juice, pineapple, chipotle peppers and oil in a blender. Blend until smooth.
  2. Pour half of the marinade onto the chicken (reserve the other half for basting) and 1 tablespoon of salt and mix well. Cover and refrigerate for 1 hour. Before cooking, bring the mixture to room temperature.
  3. While the chicken is marinating, mix 1 cup pineapple with 2 tablespoons sugar and cook until caramelized, about 5-7 minutes. Set aside to add to your tacos later.
  4. Make your no waste pineapple salsa. In a medium bowl, combine all ingredients and stir to combine. Season with salt, to taste. Serve at room temperature or chilled. It will last in your refrigerator for up to three days.
  5. Preheat the grill to medium-high heat. Clean grates and generously grease with high heat cooking oil, such as avocado.
  6. Once hot, add chicken and grill for 4-5 minutes without moving. Flip chicken over and brush with reserved marinade (that was not used on the raw chicken) and grill the other side for an additional 4-5 minutes.
  7. Flip chicken over, baste again and cover and reduce heat so it maintains 400F with the lid closed. Continue to cook until the chicken reaches 165, flipping every 5 minutes. Remove chicken from the grill and let rest 5 minutes before slicing and assembling tacos.

A Cinderella Story isn't just a movie — it's honestly a cultural moment. The costume montage, the spastic colons and synchronized swimming, the rain in this drought... even Gavin Degraw singing over the One Tree Hilltrailer on the DVD stand out! Everything about this film is iconically ingrained in our collective conscious, making Hilary Duff and Chad Michael Murray the Y2k blueprint for many of the "It" pairings we know and love today.

We last left our Princeton royalty preparing for their freshman year of college, dreaming of happily-ever-after — or at least graduation — and that was that! But in this era of reboots, I've often wondered what happened to our OG tortured poets after the credits rolled. Luckily, I'm not the only one! Chad Michael Murray just tee'd up a sequel, and yes that's me you hear squealing right now. Here's everything we know about what's to come for everyone's fave modern fairytale!

Is there a part two to a Cinderella story?

There's Another Cinderella Story, starring Selena Gomez and Drew Seeley, but that's more so a part of a series of "Cinderella stories" rather than an actual sequel. So far, we haven't gotten a follow-up on our Princeton-bound faves.

Has "A Cinderella Story 2" been announced?

There's been no formal announcement yet, but that doesn't mean all hope is lost. During his press tour for Mother of the Bride, Chad Michael Murray told ETthat he's definitely interested in bringing Austin Ames back. He said that even his daughter told him, "You need to make another one of these, Daddy," after she watched A Cinderella Story for the first time.

His response to the idea? "Here you go, Hil. From me to you, let's do it!" — referring to Hilary Duff, of course! The timing couldn't be better either, given that Hilary just gave birth to her fourth child and could hypothetically be available to film in the coming months...just saying!

Again, there's no official information about this project yet, but with a main piece of the puzzle on board, we're one step closer to my own personal happily-ever-after — a real sequel to A Cinderella Story once and for all.

SERVES 6 TO 8

  • 1 pound (455 g) fresh mushrooms, such as shiitake, oysters, maitake, or cremini
  • 2 tablespoons unsalted butter
  • 2 fresh oregano sprigs, leaves only
  • ¼ cup (60 ml) extra-virgin olive oil
  • 12 large egg
  • 1¼ cups (125 g) finely grated pecorino cheese
  • ¼ teaspoon Himalayan pink salt
  • Finely grated zest and juice of ½ lemon, preferably organic
  • Fragrant fresh herbs, such as parsley, mint, and oregano, for garnish

My grandmother, an American-born Puglian, cooked in the manner of cucina povera, which she learned from her mother. This included a ton of vegetables, herbs, spicy dried chiles, and eggs. Frittatas made their way to our table for breakfast, lunch, and dinner, sometimes herby one with oregano and mint, or a pile of leftover pasta, other times filled with slow-cooked, delightfully mushy broccoli rabe, and often a mushroom frittata, usually made with cremini. Like a combination of shiitake and maitake. The flavor is extraordinary—rich, earthy, and a little meaty without any heaviness. The key to this recipe, as with many Puglian dishes, is a nice amount of flavorful olive oil and some sharp, salty pecorino.

  1. Preheat the oven to 450°F (230°C).
  2. If using cremini or shiitake mushrooms, thinly slice with a mandoline or sharp knife. If using maitake or oyster, gently tear into small pieces.
  3. In a 10-inch (25 cm) nonstick ovenproof lidded skillet, melt the butter over medium-low heat.When it starts to foam, add the mushrooms and oregano leaves and cook until soft and any liquid has been released, 3 to 5 minutes. Stir in the oil.
  4. In a large bowl, whisk together the eggs, 1 cup (100 g) of the pecorino, and the salt.
  5. Add the egg mixture to the pan and sprinkle the top with the remaining ¼ cup (25 g) cheese,the lemon zest, and lemon juice.
  6. Reduce the heat to low, cover the pan, and cook until the bottom starts to brown, 5 to 10minutes. (Check the eggs by lifting the bottom with a spatula.) Once the bottom starts to brown, transfer the pan to the oven, uncovered.
  7. Bake for 5 minutes, then check to see if the top is puffing up. Cook a few minutes longer if not. The frittata is done when it starts to brown around the edges and a little bit on the top.Look for the oil bubbling up around the sides. This is totally normal. Once you remove the frittata from the oven to cool, the oil will get absorbed into the eggs, making it yummy and so delicious.
  8. Serve the frittata warm or at room temperature, garnished with fresh herbs.

Prince Henry and Alex Claremont-Diaz stole our hearts with their antics, proving that love isn't always as cookie cutter as we think it should be. Not only that, but it was the LGBT film we never knew we needed until it hit the big screen last year.

Is the main cast returning?

I'm happy to share that Nicholas Galitzine and Taylor Zakhar Perez are returning! I honestly don't think the Red, White & Royal Blue sequel would be the same if they weren't.

However, no other cast information has been released! Hopefully we'll see Uma Thurman and Clifton Collins, Jr. reprise their roles!

What's the sequel going to be about?

As of yet, Variety reports that not much has been confirmed about the sequel's plot or release date. My guess is that there the two lovebirds will have to juggle new responsibilities and mishaps.
