Meet the #GirlBoss Changing the Ice Cream Game

Jeni Britton Bauer founded Jeni’s Splendid Ice Cream for one very simple and cool girl reason: She thought she could make ice cream better. Jeni’s beginning may have been simple, but her journey has been anything but. Her company creates incredibly innovative ice cream flavors made from the very best ingredients, like sweet corn spoon bread and brambleberry crisp. As if that’s not enough, they’re also focused on building and fostering a community that does good for the world. We had the chance to catch up with Jeni to talk culture, community, collections and, yes, ice cream — ALL of the ice cream. Scroll on to discover what this culinary genius has up her sleeve.

B+C: What inspired you to start Jeni’s Splendid Ice Cream?

JBB: I thought ice creams could be better and more interesting. I made my first ice cream back in 1996 using cayenne essential oil that I added to store-bought milk chocolate ice cream. It was spicy and sweet. The sky opened up and I could see my whole life in front of me.

B+C: Can you explain a little bit about your B Corp certification? Why was this important for you to obtain?

JBB: We’ve always just done what felt like the right thing to do, even way back before B Corps were a thing. I think that getting this difficult certification helps show the world that we mean it, and it’s not just a marketing play. It’s a way to express what we’ve always been doing, like using Direct Trade and Fair Trade ingredients. It’s a philosophy deeply engrained in the way we work.

B+C: How has obtaining the B Corp certification shaped your business? Your community?

JBB: The certification hasn’t necessarily shaped our business, but rather, it calls attention to what we are, and always have been doing. It’s not the easy route. But we believe that we are forging a path for the next generation of better businesses and the whole good food movement. This work is essential to who we are and what we do. It is the reason we exist as a company.

B+C: Why is being connected to your community such an integral part of Jeni’s DNA?

JBB: It’s not just about building community where we live, but building a community and bringing people together, wherever we go. We have always been about people first. Actually building relationships is more important to us than the latest marketing trend or buzzword. It takes hundreds of people to bring an ice cream to life, from our own team through our network of growers, producers, makers and suppliers. It’s important for us to buy from people who make or grow what they do where it is best geographically to do so, and by the people who do it best.

B+C: Your company went through a very public recall in 2015. Why was it important to be so transparent about the process with the public?

JBB: For the past 13 years, we’ve built our business on relationships with other people, namely our customers. As with any relationship, when you fall short, honesty and openness is the best chance you have to maintain trust and to earn forgiveness. You own it, even when it sucks. And then you get better to make sure whatever happened doesn’t happen again.

B+C: What did you learn from the 2015 recall?

JBB: We found so many ways to benefit from this journey almost immediately. And to emerge a better, stronger, tougher and more interesting company. Seeking and embracing change is in our company DNA. One other thing we did last year was look around to find opportunities to get better. That included safety. We have always been good at sanitation and food safety, but we are so much better now. We believe that our efforts today are setting the standards for good food production in the 21st century, including restructuring of our production model, which is extraordinarily complex.

B+C: Can you talk a little about your sourcing process? Why is local important? Does having relationships with your farmers and suppliers make you a better business, and if so, how?

JBB: We believe we should buy ingredients from where they grow best, like grass-grazed milk from Northeast Ohio, or vanilla beans from Uganda. We seek out people we like, who think entrepreneurially and who want to grow with us. We value buying directly from people we know and have relationships with over simply buying local to say “it’s local.” We think that’s what makes us stronger, more interesting. We never want to build a homogenous community.

B+C:Why is it important for business leaders to be committed to their communities?

JBB: If only because we live in them. That’s enough.

B+C: How do you stay creative?

JBB: Being creative is about solving problems, answering questions. I stay curious, and that leads to the questions. And I do that by reading, listening, looking and following my curiosities to the very end.

B+C: What’s your advice for women entrepreneurs?

JBB: You were born to do this, girl!

B+C: Jeni’s collections, like your latest American Licks, are well-loved. Can you talk a little bit about the process of developing these collections?

JBB: Each collection is unique. Some need to be more traditional, like holidays, because we all crave specific things then. Some can push the boundaries more, like in spring and winter. I generally start with a question: If we remove context from flavors that we think are outdated, and combine nostalgia with historical record, will we see them with new eyes? That can lead to other questions like: Which is more truthful, what it was or what you believe it was? So a lot of these are experiments. For spring, we are inspired by a car, but more, we are inspired about a personal journey, and the flavors are stops along the way. It’s looking at the idea of growing, finding your own way and becoming who you want to be.

B+C: We have to ask! What’s your favorite flavor of all-time?

JBB: Lemon… and maybe green mint chip, but I’m still processing that.

Oreo McFlurry: 9/10

The Oreo McFlurry lands right on top for me. Oreos are a superior mix-in, because they’re bulkier than your average M&M or Butterfinger bar, giving the McFlurry more body in each bite. I enjoy how unlike the M&M McFlurry flavor, the Oreos retain their original texture: crunchy and light. They’re the perfect complement to the soft serve. My only complaint is that there could be more!

Crunch McFlurry: 5/10

I can’t hate a Crunch bar. I think the naturally-airy texture of the candy pairs really well with the soft ice cream McDonald’s uses for their McFlurries. I think the Crunch bar is very humble – landing neutrally in the middle of my ranking. It’s not outstanding, but it’s not terrible, either.

Butterfinger McFlurry: 4/10

I’m sorry to this McDonald’s McFlurry flavor, but I will always opt for Butterfinger offerings from other drive-thrus if I have the option. McD’s Butterfinger McFlurry variety is good, but not great. I just think I’m such a chocolate fiend that I demand a lot more chocolate in my McFlurries than the average person. The volume of candy included in this pick is definitely disappointing.

Heath McFlurry: 3/10

If I had to say one thing about the Heath-flavored McFlurry, it’d be “meh.” Like I’ve mentioned already, I’m always left wishing for more mix-ins, volume-wise. The Heath pieces in this McDonald’s McFlurry are few and far between, and it really makes me feel like I’m missing something with each scoop.

M&Ms McFlurry: 2/10

While I could eat handful after handful of M&Ms, I am not a fan of the classic M&Ms McFlurry. I hate how the M&Ms turn hard and frozen when they’re mixed into the vanilla soft serve ice cream. The hard texture makes each bite truly dreadful! Plus, I’ve never once had an appropriate amount of candies to balance out the creamy ice cream component – every M&Ms McFlurry I’ve ordered is simply lacking in the mix-ins department.

Cadbury Creme Egg McFlurry (Ireland)

I am truly fuming with jealousy that McDonald’s Ireland gets to have the Cadbury Creme Egg McFlurry. They’re my #1 Easter candy, and so addictive that I could eat a whole bag. When you mix that with soft serve, how could it be bad?! My only concern is, like with the M&Ms, the candies would freeze up and get hard, making it difficult to eat.

Siakam Swirl McFlurry (Canada)

The Siakam Swirl McFlurry, available in Canada (minus Quebec), blends smooth ice cream with hot chocolate fudge and red Smarties, a hard-shelled chocolate candy. I love that the hot fudge is included in this flavor – I think it’d add an interesting flavor effect with the mix-ins.

Daim McFlurry (Denmark)

This McFlurry flavor from Denmark looks so good! The Daim McFlurry fuses Daim candies (chocolate and almond) with the classic ice cream base. The McDonald’s Denmark site says that it’s made with fresh milk, which makes a huge difference in taste and texture. The smoother ice cream looks like it pairs exceptionally well with the crunchy candy.

Stroopwafel McFlurry (Netherlands)

It’s only right that McDonald’s Netherlands has a Stroopwafel McFlurry. I need to find acopycat recipe, ASAP! The stickiness of the wafers and caramel would be divine.

Pinguinos McFlurry (Mexico)

Mexican McDonald’s must be so scrumptious, because they have a Pinguinos McFlurry! If you’ve never had Pinguinos, they’re basically the same thing as Hostess Cupcakes. I can only imagine how yummy the cakey, sugary pastry would meld with ice cream. Delish!

Pistachio McFlurry (Italy)

I am concerningly obsessed with pistachio-flavored anything, and I think this Pistachio McFlurry from McDonald’s Italy belongs in my belly right this instant. It looks like it has some crunchy pistachio bits mixed in, with a green-ish pistachio syrup drizzled on top. OMG.

If there are two things you can count on, it's that I'm always thinking about Gilmore Girls and I'm always listening to Taylor Swift. As soon as I pressed play on The Tortured Poets Department, I could tell this album would resonate with so many experiences I had a child and a teenager. I've always been imaginative (and, admittedly, a bit spacey), and to this day, I never leave home without a book.

I've built thousands of imaginary worlds and crafted endless stories, but have always had difficulty keeping up with real-world relationships. So, needless to say, when I listened to Taylor Swift's new album and heard "I Hate It Here" and "The Bolter," I felt seen. I also realized these two songs would speak to Rory Gilmore in the same way!

Rory Gilmore Would Love "I Hate It Here" By Taylor Swift...

"I Hate It Here" totally showcases Taylor Swift's ability to express raw emotions, and it also perfectly captures Rory Gilmore's struggles during certain periods of her life. The lyrics reflect frustration and dissatisfaction we can all feel sometimes (I know I've definitely felt them), and while Rory and Taylor's dreams in and of themselves are different, they both want to leave their small towns to achieve them. Whether it's feeling overwhelmed by expectations or facing setbacks in her career in Gilmore Girls season 5, Rory has moments throughout the series where she feels a bit trapped.

But even more than the physical meaning of the song is the imaginary one. Taylor sings about creating worlds in her mind and diving into books to escape the mundane. Rory reads more than any fictional character I've ever seen before because she also craves that escapism! The lyrics of "I Hate It Here" resonate with Rory when she wants to live different lives, and it encapsulates the moments when she struggles or questions her decisions — relatable!

...And She'd Feel Attacked By "The Bolter" By Taylor Swift

TBH, I'm half convinced "The Bolter" is referencing Amy March (after all, Amy has been "reviled" by readers for hundreds of years, and she "almost drowned...in frigid water" like Taylor sings), which is just another literary reference Rory would pick up on.

In "The Bolter," Taylor Swift captures the essence of a woman constantly seeking adventure and change, just like Rory Gilmore, and it's all about the idea of a restless spirit. While the lyrics can be taken from a hypothetical standpoint (feeling trapped by relationships or other people's expectations), we can also talk about it literally considering Rory physically runs away from Jess.

Rory might desire love, but the idea of it also scares her — two facts that don't cancel each other out! Just like Taylor Swift, I think Rory's thrilled by the idea of escape simply because she's so risk averse in other areas of her life. Once again, I say, relatable!!

"The Bolter" and "I Hate It Here" are both incredibly engaging songs because they highlight just how complex we are as humans — both in the ways we relate to ourselves and other people. And they're just two Taylor Swift songs Rory would definitely add to her playlist.

Similar to Reese’s chocolatey, coffee-filled “snow salt Chocochinos,” our snow ice cream recipe builds its sweet base using actual snowfall. But, before you dive in to your nearest pile of untouched snow, make sure you follow these safety tips:

  • Use clean snow only. Don’t eat snow that’s been plowed – it’s likely to be contaminated with asphalt, snow-melting salts, and dirt that can harm you when ingested.
  • If you use pesticides or fertilizers on your lawn, you might consider finding fresh snow elsewhere to avoid harmful contaminants.

The best way to collect snow for making snow ice cream is in a clean bowl as it falls. From there, you can start mixing in milk, sugar, vanilla extract, and your fave sea salt!

Ingredients for Snow Ice Cream

  • 1 cup of milk (any kind will work)
  • 1/3 cup granulated white sugar
  • 1 tsp vanilla extract
  • 1 pinch fine sea salt
  • 8 cups of clean snow

Directions for Snow Ice Cream

  1. Begin by placing a large bowl in the freezer before you begin. Cold bowls help keep your snow ice cream from melting too fast.
  2. Once you've measured out all of your sugar, vanilla extract, salt and milk, take your large bowl out of the freezer.
  3. In the bowl, whisk together the milk, sugar, vanilla and salt until well combined.
  4. Next, head outside and scoop up some clean, fresh snow. (Or, if you've already let it collect in the bowl, bring it inside and add to the large bowl.)
  5. Immediately after adding the snow with the other ingredients, stir until it is incorporated and looks as close to regular ice cream as possible.
  6. Time to eat! Dive in right away and enjoy your sweet treat.
