Dorie Greenspan’s Sweet Potato Topping Will Make You Ditch the Marshmallows

Cookbookmarked! is our new series where we review the latest cookbooks from the foodie influencers you follow. Check back often to find out which new releases are worth your hard-earned cash and the recipes you should try first from each.

When we think of Dorie Greenspan, cookies come to mind (who wouldn’t to pull a batch of world peace cookies out of the oven about now?). Her very name conjures up flaky pastries and lavish layer cakes. She definitely swings sweet, but that’s not all she eats. For her newest cookbook Everday Dorie: The Way I Cook($35), Greenspan tackles the recipes she makes at home on the regular. Yes, there’s a cookie in there (she concedes that she can’t help tinkering with chocolate chip cookies), but this book is chock-full of meal ideas that are weeknight-easy.

It’s quite possible that you’ll have a hard time figuring out which recipe to make first. The cover photo showcases her brunch tart, stuffed with cream cheese, smoked salmon, capers, and red onion that brings a bit of New York to your table. She offers up her own takes on classic dishes like a French potato tourte (imagine thin slices of herb buttered potatoes inside puff pastry with cream poured in before baking). For her roast chicken with pan-vinaigrette sauce, she claims she tastes “France in every bite.”

Apart from living in New York, Connecticut, and Paris, travel inspires her everyday cooking. Many of the recipes in Everyday with Dorie lean on Asian spices and sauces like the citrusy Japanese ponzu sauce. She even makes use of yuzu kosho, a citrus-chile paste. Korean chile sauce gochujang is a regular seasoning, appearing in recipes like umami burgers. Miso corn takes her back to Tokyo and a revelation that miso is the secret ingredient of a street corn she ate there.

Miso also shows up also in a jam for sweet potatoes that will have you rethinking the marshmallow-topped yams this Thanksgiving. This recipe is easy, and the payoff is big. You roast sweet potatoes, and while they’re doing their thing, you whisk together the jam (that’s umami-rich from the miso, hot from sriracha, sweet with maple, zesty from the ponzu, and has a supple texture thanks to the butter). We have a hunch these will become your new side-dish sidekick.

MISO-MAPLE-JAMMED SWEET POTATOES

(Serves 4)

You could probably just lick this miso-maple jam off a spoon and be happy, but happiness is multiplied manyfold when you spread it generously over steaming-hot sweet potatoes. The jam, a mix of melted butter, miso, maple syrup, sriracha and ready-made ponzu sauce, is just a touch sweet; mainly it’s spicy, salty and, because of the miso, hard to describe, as so many umami-rich foods are. If you like the jam as much as I do, keep some in the fridge to use on roasted carrots or squash, steamed cauliflower or seared salmon, halibut, or scallops. A word on the potatoes: The jam will be luscious on any type of sweet potato — it’s not bad on white potatoes either — but my preference is for Garnet sweet potatoes. You could use Japanese yams — the ones with white flesh — but they’re so inherently sweet that they tend to mute the complexity of the jam. The jam can be made up to three days ahead and kept tightly covered in the refrigerator. The potatoes are meant to be served as soon as they’re roasted. However, if you have leftovers, you can remove them from their skins, mash them with some miso jam and reheat them in a 350°F oven.

Ingredients:

  • 4 medium sweet potatoes or yams (see headnote), scrubbed
  • 2 tablespoons unsalted butter
  • 2 tablespoons light (white or yellow) miso
  • 2 tablespoons maple syrup
  • 1 tablespoon ponzu sauce
  • sriracha
  • fine sea salt and freshly ground pepper

Directions:

1. Center a rack in the oven and preheat it to 400°F. Line a baking sheet with foil.

2. Using a paring knife, poke a few holes in each potato. Place the potatoes on the baking sheet and roast for about 1 hour, until they give when prodded or squeezed.

3. Meanwhile, melt the butter in a small saucepan over low heat. Turn off the heat and gently whisk in the miso until fully incorporated. Whisk in the maple syrup, ponzu, 1/4 teaspoon sriracha, a big pinch of salt and a few grinds of black pepper. Even though the miso and ponzu are salty, you need more salt to counterbalance the syrup and enliven the jam. Taste and add more sriracha, salt and/or pepper, if you’d like. (You can pack the jam airtight and keep it in the refrigerator for up to 3 days.)

4. The simplest way to serve this dish is to let everyone split their potatoes and slather on some of the miso jam.

5. Alternatively, line the two baking sheets with clean foil and lightly butter or oil it. Cut the potatoes into chunks and place them flesh side up on the sheets. Press them down with a fork — don’t overdo it, you just want to create a few grooves — and spread some jam over each chunk. Return the potatoes to the oven for another 10 minutes.

5. Pass the rest of the maple-miso jam at the table, so that everyone can have a little more.

Mushroom Frittata

Excerpted from Cooking With Mushrooms: A Fungi Lover's Guide to the World's Most Versatile, Flavorful, Health-Boosting Ingredients by Andrea Gentl. Artisan Books © 2022.

SERVES 6 TO 8

  • 1 pound (455 g) fresh mushrooms, such as shiitake, oysters, maitake, or cremini
  • 2 tablespoons unsalted butter
  • 2 fresh oregano sprigs, leaves only
  • ¼ cup (60 ml) extra-virgin olive oil
  • 12 large egg
  • 1¼ cups (125 g) finely grated pecorino cheese
  • ¼ teaspoon Himalayan pink salt
  • Finely grated zest and juice of ½ lemon, preferably organic
  • Fragrant fresh herbs, such as parsley, mint, and oregano, for garnish

My grandmother, an American-born Puglian, cooked in the manner of cucina povera, which she learned from her mother. This included a ton of vegetables, herbs, spicy dried chiles, and eggs. Frittatas made their way to our table for breakfast, lunch, and dinner, sometimes herby one with oregano and mint, or a pile of leftover pasta, other times filled with slow-cooked, delightfully mushy broccoli rabe, and often a mushroom frittata, usually made with cremini. Like a combination of shiitake and maitake. The flavor is extraordinary—rich, earthy, and a little meaty without any heaviness. The key to this recipe, as with many Puglian dishes, is a nice amount of flavorful olive oil and some sharp, salty pecorino.

  1. Preheat the oven to 450°F (230°C).
  2. If using cremini or shiitake mushrooms, thinly slice with a mandoline or sharp knife. If using maitake or oyster, gently tear into small pieces.
  3. In a 10-inch (25 cm) nonstick ovenproof lidded skillet, melt the butter over medium-low heat. When it starts to foam, add the mushrooms and oregano leaves and cook until soft and any liquid has been released, 3 to 5 minutes. Stir in the oil.
  4. In a large bowl, whisk together the eggs, 1 cup (100 g) of the pecorino, and the salt.
  5. Add the egg mixture to the pan and sprinkle the top with the remaining ¼ cup (25 g) cheese, the lemon zest, and lemon juice.
  6. Reduce the heat to low, cover the pan, and cook until the bottom starts to brown, 5 to 10minutes. (Check the eggs by lifting the bottom with a spatula.) Once the bottom starts to brown, transfer the pan to the oven, uncovered.
  7. Bake for 5 minutes, then check to see if the top is puffing up. Cook a few minutes longer if not. The frittata is done when it starts to brown around the edges and a little bit on the top.Look for the oil bubbling up around the sides. This is totally normal. Once you remove the frittata from the oven to cool, the oil will get absorbed into the eggs, making it yummy and so delicious.
  8. Serve the frittata warm or at room temperature, garnished with fresh herbs.

July 1 — the officially mid-year point for 2024 — is fast-approaching, and it's a good checkpoint for how you’re doing when it comes to reaching your 2024 goals. Most of us rolled into the new year feeling hopeful that we could meet a list of resolutions by years-end. How are those going? If you’re not where you’d like to be by now, here’s a little help to get you back on track.

Image via Dream Inn

I recently spent a weekend at the Dream Inn in Santa Cruz, CA with meditation master Sarah Vie, author of I Wish I'd Known, and about 35 other women to uncover emotions that might be holding us back. A beachside hotel called the Dream Inn couldn’t have been a more perfect location to ponder life’s biggest questions – without kids, dogs, partners, work, and a house to pull us out of our “me” zone.

I started the weekend off a little bit of a mess: stressed from traffic, organizing a dog sitter, and making sure I could log off from work for the weekend. Any talk of meditation and manifesting my dreams was not on my radar when there was a house to clean! Bills to pay! Kid to care for! I realize now how close I was to burnout.

My weekend with Sarah manifesting my dreams at the Dream Inn pulled me back, set me straight, and transformed my mood and energy in ways I never expected.

Here’s what I learned about manifesting your dreams right now.

1.Write down your dreams: And don’t just write them down – be specific about what they look like and how they feel when you’ve finally reached them. Close your eyes and imagine yourself in that moment. Where are you? What does it feel, smell, sound like? What are you doing when you reach them? Use visualization tools like a vision board placed front and center; start a daily meditation routine that keeps you focused on your purpose; and try saying your goals aloud to yourself (if that’s not too weird). These practices can help keep you driven and focused.

2. Write down the “show-me’s”: According to Sarah, this is the how. Write down the small steps for achieving bigger goals. Be consistent. It’s a lot easier to give up on your dreams, when the steps for getting there are not already part of your routine. “We can't just do something one time and expect to change a habit,” said Sarah. Reframe how you think about reaching your goals – a mindset of will do vs. maybe will – and create a routine around the steps.

3. Practice gratitude. Practice gratitude for what you already have – this has a lot to do with shifting your energy and what you attract because what we feel inside attracts the same energy outside. Start a gratitude journal or try these gratitude prompts.

4. Set a daily intention. Sarah suggests using LSD: listen to yourself, stop negative thinking, and declare your goals. Every morning find a quiet space to listen to yourself and your needs – this may be actual meditation, or sitting with a cup of tea, or taking a walk or hike. Set an intention for the day that will help you reach your goals.

5. Replace negative thoughts with positive affirmations. We talked a lot about energies and magnets – what we put out there, we attract so if you're feeling stressed and chaotic guess what's coming right back at you? Underneath that stress though is usually fear – fear of not seeming perfect or saying no or not doing what your true inner self wants to do. Replace those negative beliefs with positive ones; treat yourself with kindness and understanding; and allow yourself to heal slowly to reach a healthier way of living. "Replace those old stories you tell yourself and redefine them into something positive, so your conscious mind starts to believe you can," says Sarah.

6. Focus on what brings you joy. Spend more time doing the things that bring you joy and your energy will shift to a more positive mindset. A positive mindset is key to achieving your goals, attracting positive experiences, and living the life that you want.

7. Stay accountable. Whether it's a friend or partner or a journal that you check in with on a daily or weekly basis, find ways to hold yourself accountable for your goals and check off those small steps you decide are the best way to get there. You got this!

Every time I hear about a new celebrity wedding, I immediately scour the internet for photos. Was it a destination wedding? Were there other fun celeb guests? What did they WEAR?! When Sofia Richie-Grainge got married last year, I was glued to my phone checking for updates on what outfit she would stun us with next. Call me crazy, but I just love a celebrity wedding.

Given that the dresses — from chic and lowkey to largely extravagant — are my favorite part of a celebrity wedding, I did some research and found my top 10 favorite celebrity wedding dresses in recent years so we can obsess over them together! Keep reading to see some really stunning bridal looks!

Alex Cooper

www.instagram.com

Our most recent bride to date is none other than Call Her Daddypodcaster, Alex Cooper. She stunned us all with multiple wedding dresses paired with a natural hair and makeup look. This one had to be my favorite because of the silhouette — it honestly screams vintage and class and I so absolutely love it! She caused some controversy for not wearing mascara, but I think it's a beautiful, unique choice! She looks like the perfect, blushing bride!

Sofia Richie-Grainge

www.instagram.com

Sofia Richie-Grainge had the entire internet in a complete chokehold over her wedding outfits, and she's since deemed herself a fashion icon because of it. She quite literally caused a "quiet-luxury" frenzy with her revamped style of late, and her wedding dress was no different. TBH, this whole wedding is at the top of my list in terms of style, venue, and location. Everything about it looked idyllic and stunning; just like her!

Hailey Bieber

www.instagram.com

I'm a huge Hailey Bieber fan, and while I enjoy her style as a whole, one of my most favorite looks of hers is this wedding dress. She looks regal and sexy at the same time, and her veil is also incredibly unique, embroidered with "til death do us part." This was created by the ever-iconic Virgil Abloh before his passing, and he did an incredible job on it. It truly makes us remember what an icon and inspiration he was to the fashion community!

Erin Foster

www.instagram.com

This look from Erin Foster was surprising to me because it has such a vintage-feel to it! It's kind of reminiscent of The Princess Bride with the adorable peasant-sleeves and flowing gown — both sweet details to this gorgeous dress. It's one of my favorites for it's simple, bohemian style!

Priyanka Chopra

www.instagram.com

This was one of Priyanka Chopra-Jonas's many looks, but it's definitely her most classic bridal gown. It was regal and chic, with a silhouette that was truly made perfectly for her! The intricate detail and buttons on the dress are also a work of art! Put it in the Louvre!

Lily Collins

www.instagram.com

Speaking of art, this dress looks like a Victorian vision! I absolutely love Lily Collins's cape, giving her a Grace Kelly-esque style that exudes royalty and class. And TBH, I would expect nothing else from Lily! Truly, one of the most beautiful wedding dresses I've seen in recent years!

Taylor Hill

www.instagram.com

This is also a favorite because I've never seen a venue/location and dress tie together so seamlessly! The countryside vibe of the venue with the whimsical feel of her dress make for the perfect pairing. She looks phenomenal (as always), but looks particularly breathtaking in this sweet and charming style of dress wit the off-the-shoulder ruffles and bows. A 10/10 indeed!

Bel Powley

www.instagram.com

Bel Powley is someone that surprised me with how absolutely gorgeous her wedding dresses and outfits were. I hadn't kept up with her style too much before, but when I saw these Miu Miu pieces from her wedding, I was truly SHOOK. And while the dresses were amazing, the accessories were an absolute moment. Her ballet slipper heels, hair bows, and draped pearl earrings gave off vintage dream vibes! I love this one!

Jasmine Tookes

I keep up with model Jasmine Tookes for style inspiration all the time. If you're looking for someone who exudes class and quiet luxury, then look no further! So, naturally, her wedding was no different. It was luxurious, classy, and spectacular. This lace dress really made her look like royalty, and the diamond-encrusted headband was a lovely touch.

If you haven't seen Alexandra Daddario's wedding pictures yet, you must go scroll for them because it was a pretty huge affair! It took place in New Orleans and she looked like quite the Louisiana beauty. This gown and umbrella combo was such a look, and I can't get over how absolutely stunning she was in every single one of her bridal outfits! Definitely a top dress I've seen in the past couple of years!
