This Gloriously Ghoulish Red Velvet Cake Recipe Is Perfect for Halloween

If you're planning an epic Halloween bash this year, you'll want a gloriously ghoulish red velvet cake recipe to serve. It'll make a spook-tacular centerpiece and satisfy the sweet teeth of your guests. And it's stress-free — you can bake the meringue bones and cake layers in advance and assemble the cake just before you're ready to serve. Make sure to have some Halloween-themed drinks to serve alongside the cake!

Ingredients:

For the cake layers

  • 4 ounces soft unsalted butter
  • 11 ounces sugar
  • 2 large eggs, lightly beaten
  • 10 ounces self-rising flour
  • 2 level Tablespoons cocoa powder
  • 8 1/2 ounces buttermilk
  • 1/4 teaspoon gel paste food coloring
  • 1 teaspoon vanilla extract
  • 2 teaspoons white vinegar
  • 1 teaspoon baking soda
  • cake release spray

Instructions:

  1. Preheat the oven to 330 degrees Fahrenheit. Spray three 6-inch cake tins with cake release and line the bottoms with baking paper.
  2. Sift the flour and cocoa powder into a bowl and set aside.
  3. Cream the butter and sugar together in a stand mixer fitted with the paddle attachment until pale and fluffy. Stop the mixer halfway through and scrape the bottom and sides of the bowl.
  4. Mix the eggs with the vanilla extract and gradually add to the batter, beating constantly. If the mixture curdles, add a spoonful of flour.
  5. Mix the food coloring with a couple of tablespoons of buttermilk.
  6. Transfer to a measuring jug and mix with remaining buttermilk until the color is evenly mixed.
  7. Alternate adding the flour and buttermilk into the batter, starting and ending with the flour. It is best to fold in the last addition by hand to avoid overworking the batter.
  8. Mix the vinegar and baking soda together (use the jug that contained the buttermilk). It will froth up — immediately mix it into the batter.
  9. Divide the batter between the prepared cake tins and level.
  10. Bake for 30-35 minutes, or until a skewer inserted in the center comes out clean, with the cakes springy to the touch and coming away from the edges of the tin.
  11. Leave to cool in the tins for 15 minutes, then carefully turn out onto a cooling rack. Cool completely before frosting.
  12. Cover and chill the cakes in the fridge for an hour so that they have a chance to firm up a bit. Level the tops and keep any scraps. You can spread those on a tray and dry in the oven at 215 degrees Fahrenheit for 10 minutes. Cool and blitz in a blender to make the red velvet crumbs — they're great for decorating the cake.

  • 1/4 teaspoon Cream of Tartar

  1. Preheat the oven to 215 degrees Fahrenheit.
  2. Put the egg whites and Cream of Tartar in the bowl of your stand mixer (make sure it is spotlessly clean). Whisk on low speed until they start to froth up.
  3. Start adding the sugar, one tablespoon at a time, once the meringue forms soft peaks.
  4. Continue whisking at maximum speed for several minutes until the meringue is glossy and forms firm peaks.
  5. Transfer to a piping bag fitted with a plain round tip.
  6. Pipe the bones on two large trays lined with greaseproof paper.
  7. Bake for 1 hour and 30 minutes or until the bones are dry to the touch and lift easily from the baking paper. If they feel too soft, continue baking for longer.
  8. Once the bones are ready, turn the oven off and open the door slightly. Leave them in the oven until completely cool. Keep in an airtight container until ready to use.

  • 1 pound full-fat mascarpone cheese
  • 7 ounces icing sugar
  • 1/2 cup heavy cream
  • 2 teaspoons vanilla extract
  • blackberry syrup — store bought or make your own

Instructions:

  1. Put all the mascarpone, heavy cream, icing sugar, and vanilla extract in the bowl of your stand mixer.
  2. Whisk on low speed to combine. Increase the speed to maximum and whisk for a minute. Stop the mixer and scrape down the sides and bottom of the bowl.
  3. Whisk again until you have firm peaks — about a minute more. Do not overmix. Keep chilled until ready to use.
  4. Transfer the frosting into a large piping bag fitted with a plain round tip.
  5. Add a little frosting on your cake stand or platter to secure the bottom cake layer. Pipe frosting over the bottom cake layer and level. Repeat with the second layer and top with the third.
  6. Smooth a small amount of frosting over the entire cake — this is your crumb coating. Put the cake in the freezer to chill until firm — this will make it much easier to work with.
  7. Smooth frosting over the cake to cover completely. It's best done on a turntable.
  8. Add some of the red velvet crumbs over the top.
  9. Secure the bones around the cake — you might need to break them up to fit them on.
  10. If you're making the blackberry syrup, reduce it until it's quite viscous. Drizzle on the bones to create the blood-spattered effect. Serve the cake immediately, as the meringue bones will soften after a while.

Miracles happen once in a while, which is apparent because The Princess Diaries 3 is reportedly in the works at Disney, according to The Hollywood Reporter. It's been 18 years since we last saw Mia, Lily, and Queen Clarice (and since all three took part in one of the greatest birthday party scenes in film history. Tons of snacks! Karaoke! Mattress surfing!).

The Princess Diaries remains a heartfelt, uplifting, and empowering film that we will never get tired of, and the resurgence of Y2K pop culture just makes dressing up like Mia more fun than it already was. While much of this reported film (including the cast) is still rumor-only, we do have a few tidbits to share and will keep updating as news is released.

When is the Princess Diaries 3 release date?

We don't have a release date, but it appears that pre-production may have begun. According to The Hollywood Reporter, Supergirl and Quantum Leap writer Aadrita Mukerji is working on the script, and producer Debra Martin Chase (who worked on the first two films) is returning to produce. We're all in favor of women behind the scenes, so this news gets two thumbs up from us!

Anne Hathaway (whose new movie The Idea Of You hits Prime Video May 2) recently revealed that the movie's development is going very well. “We’re in a good place,” she tells V Magazine. “That’s all I can say. There’s nothing to announce yet. But we’re in a good place.”

In her recent cover story with Vanity Fair, Anne Hathaway talks about how working with Julie Andrews changed her life forever. “She respected that [fans] had a relationship to her work that spanned their entire lives and made it a beautiful experience for them,” she says of Julie stopping to sign autographs every day during The Princess Diaries. “I don’t know that I was always capable of that. So I’ve learned that I want to handle myself in a way that I’m going to be proud of at a later date.”

Anne also has a major appreciation for howThe Princess Diaries franchise as a whole turned her life upside down. "This was the film that changed my life," she says. "It felt so big at the time, and it wound up being so big, and it's kind of just gotten bigger as my life has progressed...So this is a total fusion of life and work, and all the things, and I'm just so proud to be in this movie."

We don't have an official script, but according to sources, the film might continue the storyline from the previous two movies. Based on the books by Meg Cabot, both films follow Mia Thermopolis (Anne Hathaway), an awkward high schooler who learns she is next in line to be queen of Genovia. Makeovers, royal balls, romance, and tons of fun follow.

Gary Marshall, the director of the first two movies who passed away in 2016, told People that one idea he shared with Anne Hathaway was to set The Princess Diaries 3 in the big city: "It looks like we want to do Princess Diaries 3 in Manhattan." As someone who lives in New York City, I might be biased, but setting the story in Manhattan would be INCREDIBLE. Would Mia hang out at the Met? Would the movie feature any nods to The Devil Wears Prada? Anne Hathaway, if you need another background extra, hit me up!

It has not been confirmed whether Hathaway will be returning if the film goes into production, but based on the fact that she has publicly supported a third installment multiple times, we're hoping that she'd star again! Julie Andrews, Chris Pine, and Raven-Symoné have also been a part of the franchise, but there's no word on whether they'd return either.

In December of 2022, Variety reported that Julie Andrews doubts that she'll be able to return to the franchise, but we're still holding out hope!
